Notes: Make sure you make a proper sized starter, pitch cool at 65˚F then set your regulator to 66˚F, let it rock for 3 days, then raise the temp to 70˚F for a couple days to encourage complete attenuation and reabsorption of fermentation byproducts. At this point, I usually crash the beer to 32˚F for a couple days then keg per my typical method, pouring the first pint a couple days later. |

Notes: Steep the grains for 20min at 150° in 1gl of water, sparge at 170° with 1/2 gl. Add enough water to make 1 1/2 gl. Bring to a boil, remove from heat and add the LME and first hop. Add the other hops as indicated quick cool, add enough cold water to bring to 5.5 gl strain into the primary pitch the yeast. Store for 12 days at 65-70°. Add primer to the bottling bucket dissolved in 2 cups boiling water, rack to bottling bucket then bottle. Wait ten days then enjoy super cold. |

Notes: Copy of Spring Kölsch, same grain bill, totally different hop profile, going for more fruity flavor with Citra and Crystal hops.
The mango aroma and flavor from the citra hops should be a really interesting match for the honey and smokey notes the Kölsch yeast imparts.
This is a good beer. Great with Pizza or a Hamburger on a hot day. Grandma liked it!!! :) |
