Bittering: Nugget (very very small amount)
Whirlpool: 50% Crystal, 25% Azzaca, 25% Centennial…total >90% of the hops used in the boil
Dry Hop: Simcoe, Galaxy, Mandarina Bavaria, Cascade, Citra, Chinook, tangerine peel
That dry hop is crazy, the largest portions are Cascade and Citra
If it were me, I would split the late kettle hop addition between a 10 min addition and a flameout / whirlpool addition. I think that would replicate what we do better because of how our process works. Even though we use the peel in dry hop (it’s a powder) you may have better luck using it at flameout if it’s fresh zest…or maybe both dry hop and flame out.

Notes: This is a lager beer made with beet roots.
The beer is a BJCP categorized 21A Spice, Herb or Vegetable beer, based on 2C Classic American Pilsner
The red color from the beets is not indicated in the SRM calculation.
There is a minute taste of the beets in the beer (and this is from someone who does not like beets at all) and just a whiff in the nose. Bitterness is low, clear and dry finsh.
Method (Partial mash)
– Remove the WLP840 from the fridge and warm to room temperature
– Cereal Mash the Maize and the Carapils as per schedule
– Boil 60 min.
– Add .3 oz. of Cluster hops at 60 min.
– Add DME at 30 min.
– Add beets at 20 min. (Beets were roasted earlier at 400ºF for 40 min. , peeled cut into slices and frozen for storage. Thawed for 1 hours before needed)
– Irish Moss at 15 min.
– Add .25 oz. Cluster hops at 5 min.
– Cool the wort to 70ºF
– Strain in the hot wort to the fermenter
– Top up fermenter to 3.25 gal. of liquor
– Pitch WLP840 yeast when at 70F http://www.whitelabs.com/beer/homebrew_strains.html#LAGER_YEAST
– Move to 60º area
– The OG of the malt was 1.063 and the beet sugar added 1.007 to the gravity of the wort for a total OG of 1.070.

Notes: During Mash, the original intention was to only rest at 130F and 150F. However, due to temperature miscalculations, Adding 10 qt of water to raise temp to 150F failed at doing so and settled out at 143F. Some mash was then removed and heated up, then added back to mash to raise temp to 150F. Sort of as a pseudo-decoction. It was not raised to a boil, only heated enough to raise Mash temp to 150F.
Also, this was a first attempt at using brewing salts to adjust chemistry. The source water is low in ion content and typically yields a mash pH of around 5.0 with a pale ale type beer at mash temp, so to counteract this effect salts were added to allow pH to be a little higher at Mash temp. Around 5.3. Salts also added to enhance maltiness. Salts were added to mash water and pH of Mash was checked, not the water.
finally, the Vanilla beans are cut and stripped of inner gunk, and the beans are cut into 2-3 pieces. All of which is added to secondary. Condition in secondary for 10-14 days. |

Notes: I have made this recipe to make using my Grainfather and will be using grain sourced from Ireland
My idea is to brew a more older style bitter ale that is more malty and less citrus then the Americain inspired IPA's
I intend to use a yeast starter and then let the fermentation carry on for two weeks so hopefully it will all but ferment out in about a week and the second week the yeast can be left to clean up after its self and settle out a bit
I think I will ferment it at about 19c but that might change to a bit lower tempreture if I see any advice it might beneficial to the beers flavour |
