1. Put 1 gallon of water in your kettle.
2. Put all 6 pounds of DME into the water. Stir frequently to reduce the chance of clumping.
3. Proceed to steep the grains for 25 minutes at 152 degrees.
4. I pour the last two gallons remaining over the grains into the kettle. I typically do room temp water, but you can heat your water up.
5. Bring to a boil. Add 60m hop addition.
6. Add half whirfloc tablet at 15m.
7. Add 5m hop addition.
8. Remove kettle from heat. Let it naturally cool to 180 degrees.
9. Once the wort gets to 180, drop in the flame out hop additions for 25 minutes.
10. Cool and top off with water to 5 gallons. Pitch yeast. Ferment at 66 degrees. |

Notes: Brew Date 7/1/17:
Collect 1L of wort for a lacto starter - pitch 5 pills of lacto p into starter and spin on stir plate for 24 hours.
Pitch slurry of 1318 from a previous pale ale to begin fermentation. After 24 hours pitch lacto starter.
After fermentation rack onto strawberry and lime puree. Goal is to make a low abv "strawberry margarita"
The beer didn't get very tart, possibly from residual hops in the 1318. Blended in ~2g of tart berliner weisse on 7/13/17.
Added about 6# of pureed pasteurized strawberry on 7/12/17.
Added the juice of 4 limes plus the skins of 2 of them.
Added a Tbsp or so of Pink Himalayan Sea Salt dissolved in with the strawberry puree as well. |

Notes: Put rolled oats and specialty grains in separate bags. After steeping and sparging specialty grains, leave oats in wort and bring to a boil and boil 10 minutes. Remove and discard oats..do not rinse oats.
Follow remainder of brewing and hop schedule.
Note: at flameout, cover brewpot and steep last addition of hops for 10 min, then wort chill.
Ferment for 7 days at 68-70, transfer to secondary and condition at 68-70 for 2 weeks, cold crash 2-3 days, prime and bottle. Condition at room temp for 21 days. Chill 3 days in fridge then enjoy.

Here's the final recipe that I'm brewing RIGHT NOW.
Malts
3 pounds extra light DME
3 pounds light wheat DME
1 pound Caramel 60L (steeped for 45 minutes at 150'-165')
Hops
1oz Cascade for bittering (60 minutes)
.5oz Saaz for flavor (20 minutes)
.5 oz Tettnang for aroma (end of boil)
Yeast
Wyeast German Ale
Extras
1 tsp Irish Moss (10 minutes)
4oz Lactose @ 15 minutes
2 oz real vanilla extract
Priming
>1cup Lactose
4oz vanilla (Be careful! This may be too much vanilla for some people.)
1.5 cups light DME
I'm adding the Lactose in the last 15 minutes of the boil. I'll add the vanilla in the primary, because I don't want to risk losing any that bonds to the trub. So far, it smells fantastic but I'm still at the bittering hops boil. I think this should end up with a nice caramel flavor and a good hint (perhaps a suggestion size amount) of vanilla. I've had vanillas with way too much flavor and they tasted too much like candy. This should have a decent balance.

So good. Can't even explain it - you simply must make this beer. I let it prime for almost 2 weeks before fridging it, then cracked one tonight after only about 30 hours. Great head, good lace, nice color, good body and nose. Pictures won't do it justice, but here's one anyways

Notes: This recipe is meant to me reminiscent of Sapporo, Asahi, and Kirin. However less bland. A clean yeast that really lets the hops shine would be great. This recipe would also be great fermented with WY3711 saison at 70-80F.
I should add that instead of flaked rice I cereal mash medium grain California grown rice.
