Notes: Don't add candi sugar until flame out to prevent scorching. Use a hop spider to help dissolve this.
Beer came out exactly as the numbers given here. Probably due to me giving the mash a lot of attention.
Notes are - Plum, fig and raisin. Big toasty malt aromas. All of which translates into the flavour with a little mild spicy note from the coriander and Perle hops. I am really happy with this and will brew it again. |

Notes: All grains and pumpkin go in the mash. If the pumpkin is in the boil you will most likely lose a gallon of water, and have a tough time straining the pumpkin out.
If you really want to put the pumpkin into the boil then you should use a grain bag or filter the wort before racking to your primary.
The pumpkin should be cleaned and cut into small cubes and baked for 45 mins at 350, then mashed and coated with honey. Then baked for another 45 mins at 350. Let it cool to 154 and add to mash.
For the vanilla bean vodka solution, one vanilla bean is cut in half. The seeds and goodies are then scraped into 2oz of vodka. Let the vodka sit for two weeks. |

Vote Sepp is a single hop wheat beer brewed to a session strength, with hibiscus flower, which gives it an impressively vibrant shade of pink. What Vote Sepp lacks in complexity, it more than makes up for in a perfect balance of tartness, bitterness and body. Load hibiscus in the hot wort in a tea bag.
