Notes: A day or two before brew day make a yeast starter if using a liquid strain. On brew day, dough-in with 20.4 quarts (19.3 L) of water, for a mash ratio of about 1.25 quarts per pound of grain. Target a mash temperature of 152 °F (67 °C) and hold for 60 minutes. Sparge with 170 °F (77 °C) water. Collect approximately 7 gallons (26.4 L) of wort runoff and bring to a boil, then add first hop addition. Boil for 90 minutes, adding hops at times indicated. At the end of the boil, add the final hop addition, then chill the wort to 64 °F (18 °C).
Pitch your yeast starter and ferment at 64–70 °F (18–21 °C). Following primary fermentation (about two weeks), dry hop for five days before bottling or transferring to keg. Prime to 2.3 volumes of CO2.

Only mildly bitter, the hop charges in this recipe
create a blast of in-your-face flavors ranging from ripe mango, orchard fruits, melon, lime and passion fruit to subtle
pine and floral notes. Fruit Bazooka is perfectly hazy thanks to the use of flaked oats, wheat malt, massive dry hopping, and a relatively non-flocculant yeast strain. |

Notes: Mash for 1 hour at 158F
Mash out at 167F for 10 minutes
Sparge with 167F water for 7 gallons
Going for a sweeter brew vs a drier brew, so higher mash temps.
Consider adding 1 box of graham crackers to the mash, whole, do not break into pieces as they will turn to glue. This adds an interesting, crusty hint to it, like a graham cracker crust.
Added blackprinz/chocolate malt to boil in the last 5 minutes primarily for color. There's no point/need to mash as it doesn't affect gravity.
Primary fermentation ~7 days until SG ~ <= 1.02
Secondary fermentation ~ add 2lb roasted pecan pieces & maybe 1 box of graham crackers for graham cracker crust flavor
Age in oak barrel for minimum 6 weeks.
I have no idea carbonation rates at this time, it's a porter, might be really good with nitro, but def with a porter/stout tap.

Notes: Born on 7/7/18. Add 12 oz. of chopped cherries (frozen with small amount of vodka mix) and 12 oz. 100% tart cherry juice plus 16 oz. of sweet cherry juice on 7/22/18. Place in refer at 40 degrees on 7/23/18. take out for rest on 7/26/18 for two days. Crash again on 7/28/18 and Keg on top of 2 oz. of Chocolate extract on 7/29/18.
Notes on 10/6/18: Very Dark Ruby Red. White/Faint Tan Head that settles and lasts at 1/8 inch. Very nice lacing. Nice aroma of faint smoke and roasted Malt. Begins slighty sweet and malty followed by an even slighter Chocolate taste and ending with a tart Cherry Flavor. Full bodied. Very pleasing. Alcohol is dangerously hidden and after 10 oz. you feel its affects. Served in a snifter on top of (3) liquor infused (marinated for 4 months) and pitted Michigan Cherries for an added treat!
Next Time: Try Chocolate Nibs and/or more Chocolate extract. I wonder if more Chocolate would enhance this already excellent recipe.

Notes: Tastes very good overall.
-Not very bitter
-Big fruity taste, lots of pineapple and grapefruit
-Good level of carbonation and good head retention
-Compares pretty well with other New England style IPAs
-No hint of the 7.5% alcohol level
-Appearance hazy as desired
Critiques:
-Not much hop aroma. Super fruity in taste but there is not a big aroma that jumps out.
-Color is light brown rather than orange or yellow.
-Could be a little more bitter
Measure OG = 1.072, FG = 1.017, Alcohol after bottling = ~7.5%

Notes: needs a touch more crystal for true amber colour.
1st time using hop bags - dont bother - added all those lovely hops and got very little flavour out of it. bag prevented hops optimising their potential.
beer looked good and carbonated well - but left with a fairly flavour less beer. i reckon it may have been lovely with a touch more crystal and "free hops" in the boil. |
