Notes: Day 4: Add 3 oz xtal 80, 3 oz Special B, 3 oz Cara Aroma, 3 oz Pale Choc, 3 oz xtal 60, 3 oz Caramunich II and 1/4Cup light roast coffee in 2q Ball jar with grain bag, fill with filtered boiled tap, steep @ 155F 5min, cool to 70F, hold for 30 min,add to wort.

I really enjoyed number3, but was having efficiency problems I think I have fixed now. London pride is under 5% anyway. Staying low on hops, but kicking up malt and fiddling with oats to see if it has a improved mouthfeel effect.
Also messing with the West Yorkshire yeast. I cannot effectively wash the ESB Wyeast so looking around. Going to try Thames after this one.

Notes: Conduct a mash at 150° F (66° C) for 60 minutes. Boil for 60 minutes, following the listed ingredient additions. Ferment at 72° F (22° C) for 10 days.Toast coconut until very dark, but not burnt. Add to secondary in a bag for easy removal. As you will be adding to secondary, take necessary sanitation steps when introducing the coconut. Let beer sit on coconut for 2 days. Transfer and carbonate. |

Primary Fermentation: 10 Days - 64F up to 68F.
Secondary Fermentation: 10 Days @ 68F
- Cooled wort to 63F after boil and pitched decanted starter. Increase temp 1F per day up to 68F.
- After 10 days, lower temp to 60F for 24 hrs.
- Purge secondary vessel with CO2, rack onto half of dry hops, allow temp to rise to 68F.
- At day 14, add the rest of the dry hops.
- At day 18, rack to keg.
- Attempt to wait patiently for 2 weeks until sampling.

Notes: After Fermentation, add an additional 5.5 gallons of (boiled for 10 mins) filtered water to dilute the beer down to 4% ABV. Doing this will remove the yeast flavor, bringing it in line with the style. It's also important to properly lager and use the finings listed to clear up the beer.
