Mix 3.9kg of WW Apple Juice concentrate with 21.1L water to make up to 25L volume.
Add yeast when liquid is at pitching temp.
Allow to ferment out to 1.010.
Add 40 grams of Black Doris Plum Cider Powder.
Transfer to keg and chill to prevent any further fermentation.
Our Apple Cider is made from the highest quality apples, usually 3 types being Braeburn, Royal Gala and Jazz, depending on the season. The result is a very clean and crisp cider. The apple flavours are light and pleasant and the overall taste is refreshing. We suggest to ferment to 1.010 SG and put the cooling on to stop fermentation as this will leave some residual sweetness without making the beverage too sweet. At this SG the alcohol will be 3.85%. If you want to hit 5% at this final SG, add an extra 600 grams of dextrose at the start. If you let the yeast ferment all the way the final gravity will be about 1.006 which is an alcohol content of 4.38%. If you want to hit 5% at this final SG, add an extra 350 grams of dextrose. |

1. Steep grains in one gallon of water for 25min at 155°F. After steeping, pour the remaining water, slowly pour the remaining 2.75 gallons over the grain bag (I had my bag in a strainer).
2. Add corn sugar and DME. Stir. Bring to a boil. It's a 60m boil. At the 15 minute mark, throw in a half whirfloc tab, and put the wort chiller in the boiling wort.
3. Hop schedule (I use a hop bag):
60m — .75oz Centennial
10m — .50oz Galaxy
5m — .25oz Simcoe
0m — 1oz Cascade
0m — .25oz Centennial
Cool the wort down to 180°F. Once achieved, add the 0m additions. Let these sit for 15 minutes as the wort cools. After 15 minutes, pull hop bag out.
4. Cool to 68°F. Pour wort through a funnel with a strainer into a glass carboy. I used 5gallon. Pitch the yeast and ferment.
5. I ferment for 14 days.
Bottling Day
6. Make priming solution. 2 cups of water to 4oz of corn sugar. Boil for five minutes. Cover. Set aside.
7. Pour priming solution into bottling bucket.
8. Rack beer onto bottling bucket. Stir carefully for a minute or two.
9. Bottle.
10. Wait.
11. Enjoy.
12. Brew again.

Notes: Quick turn around ale - aiming for 14 days. 6 day room temp ferment, 1 day at higher temps to encourage fermentation finish, 1 day cold crash, 5 day bottle condition, 1 day force carb in fridge.
Dry hop after 3 days until cold crash.
Shake bucket when airlock stops bubbling gently, consider yeast choice for clean/quick fermentation time. (safale 04 2-3 days turnaround sometims and clears well but can take time to clean itself up, s-05 cleaner but takes a bit longer and clears longer

boil for 90 minutes.
kill the flame, add post boil hops and let stand for 60 minutes. chill quickly and pitch a healthy amount of yeast; aerate well at pitching and once again as fermentation begins (bubbles in blow off tube).
Ferment at 68F for 14-17 days. cold crash to knock everything down, NO TRANSFER, raise back to 68F and dry hop. 3 day dry hop. bottle and let sit for 21 days.

Notes: Pitch 20g of yeast. Higher gravity than usual, so double up the yeast.
Only sparged minimally. Too much grain for me to sparge at the moment, so need a bigger bucket.
Came out with an fg of 1.028. Mash at lower temp? Tastes rich and sweet, bitterness is masked nicely. Perhaps more choc grain next time to improve the roasty flavour? |
