Brew time finished after pitching at 8 pm.
80F at 1.072 = 1.074 g/ml
Did not use mash tun, on stove top.
Accessory grains: 5.8 gallons
9 hours later bubbling.
Air-lock stopped day 4. Opened took gravity on the 6th found it to be 1.014 g/ml. Took sample and tasted, definitely ginger very sweet still. Added 2 tablespoons of yeast energizer. Placed in slightly warmer place.
Bubbles started again 20 minutes later probably from the agitation

Checked gravity, clarity and color, and a taste test.
SG 1.012, cloudy straw, Cream-ale ish plus egg from gasses from fermentation over all ginger.
Transferred into secondary.
2/15/2020
Took gravity no change 1.012 g/ml
Ginger flavor slightly more warm and with a slight ginger ale burn.
Added 2.75 oz of shaved ginger in a sanitized grain bag and canning jar for weight to keep the ginger in full contact with the beer.
2/21/20
Checked Gravity found it had dropped to 1.010 and cleared substantially. Slightly disappointed with the ginger taste and mouth feel. No where near the ginger that I had expected considering adding more ginger later today. ABV now hovering 8.8%. I am expecting no color change, but maybe another point lower in a week or two.

Checked gravity found it has stayed at 1.010 and has stayed clear. The ginger taste is mild but good rounded flavor. Calculated abv 8.84% Bottling and subsequent carbonation fermentation will more than likely yield a FG at time of pour of 1.008 g/ml or 9%. I will leave beer in secondary until bottling later this week.

Bottled w 5.4 oz Light Malt Extract
Taste more ginger than I expected, decent finish, not sweet, light mouth feel. Did something new to estimate increase in abv in the bottle after bottle conditioning. I took pre sugar and post sugar readings.
Pre Sugar = 1.010
Post Sugar = 1.102
This would equal 0.26 % ABV increase if all the sugar that is convertible converts to alcohol 9.08% in the bottle.

getting pretty real. worried about using 32% corn sugar so reducing that to 20%. prob will brew on old system but efficiency will prob be high with the sugar, adjusting up to 68. Might use lutra....
adjusting grain bill. prob dont want to use karo since it has vanilla. comes in 32floz jars which is about 2.75 lbs. there are some in amazon that dont have vanilla but like 10 bucks, we need something cheap for the philosophy of the brew, not shipped. or else might as well just use cane sugar.
consider using citra noble or some other lager hop you have on hand other than cluster.
should consider water profile...

getting realer. adjusting efficiency to 60s and adding a half pound base malt to get to 8%. could consider using cooked corn grits instead of corn syrup for more authenticity or even the real flaked corn. but. never brewed with corn syrup before so itd be nice to add to my resume.
im thinking we could package in 22oz bottles.

a lot simpler than the official recipe. not sure if all that corn syrup/sugar would fly but elsewhere they said use 1/3 corn. im just using syrup and sugar to try to ensure my final gravity will be low.
using cluster in the recipe but could/would probably substitute for something else that i already have on hand. maybe millenium

Notes: C'est bin beau mais de la ipa, faut jamais en manquer! Quand meme plusieurs changement pour la v3. Je me suis inspiré d'un grain bill recu sur instagram, sa couleur est folle!
1- ajout de golden promise et de honey malt. Ca devrait aider à donner une teinte orangée et aller chercher petite complexité de plus coté malt.
2- levure yeast bay vermont ale. Ca fit le style mais reconnue pour attenuer moins que supposée... Ça me dérange pas de rester avec la London ale III non plus.
3- meme scedule de houblons mais avec un mix simcoe/amarillo en aromatique/floral, David comfirme les taux de AA quand tu auras le temps. Pournoptimiser la couleur, je crois faire les dry hop dans des sacs. On peut aussi faire un fermenteur sur deux et comparer.
4- j'ai augmenté un peu les quantités de grains pour aller chercher 6%
J'ai d'autres point plus géneraux sur nos méthodes que j'aimerais discuter suite à mes lectures récentes.

Notes: Steeped grains for 20 minutes before boil.
Made a yeast starter.
Primary temp fluctuated between 17C and 21C. Maybe down to 16C - winter temps. Fermentation not visible until 48 hours.
Primary for 12 days, not sealed. Opened maybe 6 times total to check fermentation.
Transferred to secondary with racking cane. First time unsuccessful, so I had to refill siphon with sanitizer and do it again.
Bung was still wet when attempted to put on. Pressed it too hard and it entered carboy. Temporarily covered with unsanitized aluminum foil for 24 hours.
Boiled 300ml of water and added 1/2 cup corn sugar (dextrose). Worried about 1 gallon of headspace in secondary. Added dextrose and installed bung and airlock. Filled airlock with vodka.
Bottled on 02/19/2014.
Update: 07/22/2014. Forgot to take tasting notes :(. But I remember it being really good despite my conceived screw-ups. |
