Sacch rest at 152F for 75 min. The rice hulls will provide the structure for the bed that you need to get the goodness washed into the kettle. Boil. Kill the flame, add the 0 min hops, stir, cover and let stand for 60 minutes. Aerate, pitch and set to 69F for 10 to 14 days. Cold crash for 2 days to 37F and then bring back to 69F for dry hopping. 3 day dry hop. Bottle and condition for 21 days at 69F. |

Notes: Yeast had expiration date a month ago , I had two packages so I added both. Tossed them in some RO water as the package suggested and about 1/2 hour later it was crawling out of the jar so I guess it was good.
I just buy kits from Northern Brewer, I add one extra pound 2 row to the kit to meet the Original gravity. This time it I came out about 8 points high... |

Notes: Mash for 60 minutes at 152°F (67°C). Vorlauf, sparge, and run off into the kettle. Top up as needed. Boil for 75 minutes, adding the yeast nutrient with 10 minutes left in the boil. After the boil, chill the wort to target 175°F (79°C) and add the whirlpool/hop-stand hops. Allow the hop stand to continue for 15 minutes. After the hop stand, chill the wort to 80°F (27°C) and aerate. Pitch the yeast and set the fermentation temperature to 90°F (32°C). Let the temperature free rise to 95°F (35°C) until terminal gravity is achieved. Once gravity is stable, chill to 70°F (21°C) and add the dry hops for 3–5 days. Then cold crash, package, and carbonate. |

Heat 2 gallons of to 162°.
Add grains and let temperature rest down to 152° F and hold for 20-25 minutes.
Extracts
With the heat off add LME
Hops
Turn on heat and while stirring bring to a boil.
Add .5 oz of Phoenix hops for 60 minutes
Add .5 oz of Phoenix hops for 30 minutes
Add 1 oz Willamette hops for 5 minutes
Add 1 lb lactose.
Fermentation
Ferment for 7-10 days at 68°-72° F. Optional: You can transfer from primary to secondary after 5 days and leave in secondary for 7 days.
The final specific gravity should be 1.018-1.022. |

Notes: For the 3rd batch, don't have the Carahell, but need to use the yeast. Will swap in carapils, cutting it from 1 lb to 0.5 lb and see what we get. Will also make water adjustments to make it drier and up the bitterness another 5 -10 IBUS. Running out of perle so might swap in something there too.
The BBFKL did a really nice job on this beer. I fermented at 60ºF under 15 PSI. I felt it was just a touch on the sweet side so adding 5 IBU to balance that out, but to be. honest this beer disappeared faster than any other beer I've ever made. Upped the bittering slightly and also a little bit more sulphate. Still not 1:1, but closer.
First time I made this I did a triple decoction as the recipe called for. It was a very nice beer, but a ton of effort. Gonna emulate that with some melanoidin and call it a day this time.

Notes: Rehydrate the yeast and leave for 30mins or so. Oxygenate the wort for 30mins then add yeast and ferment around 18.5C. Dry hop after 7 to 10 days of good fermentation for another 5 to 7 days what ever you prefer. Chill to 2c for a few days then rack to keg. Carb at your personal prefrence, I usually aim for 2.5 for american style brews. Leave for a week and then consume to your delight. Should not be to bitter with plenty of malt flavour, nutty, bready and a good balnace of aroma and flavouring hops. A good recipe to tinker with. Water profile makes a big difference here, keep the PH down. |
