Notes: Clone of SweetWater 420 Extra Pale Ale. The ingredient list comes from their website, which says "2 Row, Munich, Wheat, Midnight Wheat", hopped with "Centennial, Cascade", and dry hopped with "Cascade".
It's funny that they describe it as a "West Coast style Extra Pale Ale", because as far as I've seen in the few years I've lived on the West Coast after coming from Atlanta, everything here is MUCH hoppier. I think that's what makes 420 such a favorite: it's hoppy enough to be interesting, but not so hoppy that it repels people who don't like strongly hopped beers. |

Just took 1st place in the 1st round of NHC for my Gose thanks to you fine people, couldn’t have done it without this page and wiki info!
I’ll share the recipe with you guys even though it’s really pretty basic but I guess sometimes that’s best.
5 gallon batch
50% pils 50% wheat malt
Mashed in at 154°f for 60min
Adjusted wort to 4.5 PH with Lactic Acid
Brought wort to 200°f then
Cooled to 95°f and added 8 capsules of Swanson’s L.Plantarum.
Purged Kettle with co2 and covered with Saran Wrap. I kept the wort at 90°f for 24 and got the PH down to 3.2.
Brought wort back to a boil and then immediately started cooling.
Added 10g crushed coriander, 14g pink Himalayan sea salt, and 1oz galaxy pellets at flameout. Cooled to 70°f and pitched Safale US-05. Kegged after 10 days. |

-Sacch Rest @ 151 F (recirculate w/ boiling) for 60 min

-Potentially "dry-hopping" with an as-yet-undetermined amount of honeysuckle by adding it to primary.
6/27/15: Just brewed this one. Perfectly nailed all temps and times as well as post-boil gravity. Our first to feature zero hops and a ton of weird herbs that were foraged by Debbie, one of Pat's Barismo regulars.
7/4/15: Happy Independence Day; to celebrate, we've pulled a sample of this wonderfully weird beer. Fermented down to 1.010 (narrowly missing the 1.008 we wanted, but we'll take it as it's still fairly well-attenuated and we have the "dry-hopping" [aka a tea of honeysuckle and some more elderflower] ready). The nose is biscuity, slightly estery and spicy. The additions of the different herbs are fairly muted, but the beer drinks very well-balanced and surprisingly bitter for having no hops. The mustard and mugwort lend a funky, earthy flavor while the late additions of pineapple flower, though more muted than they seemed initially when the beer went into the fermenter, make the flavor slightly brighter and more floral. Some residual sweetness is notable, but the yeast strain is dry and chalky, with some nutty and woodsy notes in the finish as well. Once this conditions and carbonates, it's going to be nuts. You heard it here first.
7/10/15: Seems that our gruit has a lacto ferm going on. Must have stemmed from careless handling of honeysuckle during "dry hop" addition. We added some more elderflower into the honeysuckle boil but must not have been hot enough to sterilize before we 86'd it back out. Luckily it's absolutely amazing with a slight tartness, and the honeysuckle really comes thru in the finish. |

Updated IBU calcs based on 9 minute extra boil time for each addition accounting for extra 8%(?) utilisation during the whirlpool stand.
Whirlpool hop-stand additions for 30 minutes starting after flameout at 95c.
No hop bag in boil - hop pellets straight into boil-strained through sieve into fermenter.
Dry hopped in stocking. Squeezed twice.
2 litre ice block to chill boil wort.
Bottled 4 July 2015.
Cold conditioned in work fridge for 2 weeks from 17 July.
Early taste - good but a little too much crystal. Sweetness may fade. |

Remove hops on about day 12 and cold crash in icewater tub for 2-3 days. Adjust bottling sugar to bottling temperature (ended up being 2.7 oz table sugar). |

Notes: Acidify wort with lactic acid to pH 4.5 before souring.
Incubate lacto to pH 3.6 using sous vide, water bath. Kettle sour: Cool to 110 degrees, pitch lacto, cover wort with plastic wrap and purge headspace with CO2.
Boil, add hops and spices per recipe.
Add pureed cucumber at high krauesen, 2 days into fermentation.
Check saltiness at packaging and adjust as necessary.
Can test pitching lacto with yeast.
8/18: Pitching K-97 without aeration, rehydration as test.
8/13/21: Modifications: Acidulated malt removed, added 4 oz wheat malt. Using Philly Sour yeast. Brewtan B removed, yeast nutrient added. Lactobacillus removed. |
