Notes: Mash grain in 5.75 gallons of water at 153° F for 60 minutes. Sparge with 2.75 gals of 168-170° F water to collect 6.5 gallons of wort. Total boil time is 90 minutes. After 30 minutes of boil, add first addition of heather flowers. Continue for remaining 60 minutes. Whirlpool and add second addition of heather flowers. Cool to 69° F. to pitch starter. Oxygenate-aerate well.
Ferment at 69° F for seven days then rack to secondary fermenter and "dry hop" with heather. Continue fermentation for seven more days until gravity is about 3° Plato (1.012) or fermentation is finished. Let settle. Rack, prime and bottle. Age seven more days before drinking.

Notes: Straight forward recipe for a quick brew day. This is a hearty and well rounded ale that is my house/go to beer!
Steep grains in muslin bag in 5.2 gals 155F water for 15mins. Remove bag and bring to a boil.
Add extract and return to boil then add hop pellets(also in muslin bag) and boil for 20mins.
Add irish moss last five minutes.
Chill in your favorite fashion and pitch at 68F.
Ferment cool - room temp 5-7 days. Rack to secondary and allow to rest 2 weeks. if possible 2nd week refrigerated or cellar temp to clarify.
I keg and force carbonate...then enjoy!
The ingredients are strong and robust and the short boil renders a complex ale with a malty, hoppy nose and clean fresh flavor.

Notes: We'll toast the centennial of the #ChristmasTruce with our own version of German-English-Belgian-influenced ale. The beer itself is designed to be friendly and accessible. It will have representative characteristics of flavor, mouth-feel, body, yeastiness, bitterness, and aroma that would have been familiar to everyone on the Belgian front line that Christmas Eve 100 years ago.
It should represent an un-melancholy and language-transcendent catalyst to reminisce about homes far away and provide a means to share connections with lands and people to which the men on both sides of the trenches dearly hoped to return.
It should have encouraged those who shared it to wish the best to their temporary comrades who, on the following day, dutifully went back to assuring that they never did return to those far away homes.
War is hell. Good beer shared with friends helps to remind us why.
Mash in at 145 for one hour
Fly sparge at 185 for 45 minutes with direct heat to 190 on boil kettle
Boil for one hour
Add dark candi syrup at 45 minutes
