Notes: Brewday March 5th. Left for Maui vacation on March 8th.
After returning from Maui trip, FG 1.016 on March 16. Wort tasted a little too malty and sweey for liking. Not enough hops.
The Kegerator door was open when I checked so I theorized temp got too hot and fermentation stalled. Closed door and left alone.
Checked fermentation on March 18th no change. March 19-20 no change.
Pitched 24 oz more sugar and a new packet of US-05 on Mar 21

Notes: The 1.7kg light Malt and 45g POR hops supposedly boiled for 90 minutes are an approximation for a Cooper's Draught tin.
The Malts were quite old and some of the hops had been in the freezer a year or two, but the actual beer has turned out bloody nice.
This was my first kegging attempt, so force carbonated in the keg after clearing (rest 5 days and gelatin.) |

Started Drinking this a week ago and the keg is almost gone! An good brew and amazing first recipe. A little bit more of a hop character than I was going for, I might consider taking the aroma hops addition at 10 mins. |

Notes: Ended up using 15 grams of El Dorado for the dry hopping part along with 20 grams more of chopped fresh ginger and 20 more grams of dried lemon peel. Slapped all of those ingredients into a pouch and let it simmer in the brew for 4 days before bottling.
Actual Final Gravity at the bottling point was 1,015 so the final ABV was slightly over 7%. |

Notes: Aroma reminiscent of Unibru's Trois Pistoles. High alcohol content comes through with smooth and sweet aftertaste notes notes on the tongue (and lips). Pours murky, muddy brown with a good tan head.
HOP NOTES: Recipe calls for 42g of Styrian Goldings, Fuggles, or Willamette hops (boiling) to achieve 7.5HBU (210MBU).
>Boil the malt extract and boiling hops for 60mins
>Add Irish moss for final 10mins
>Aarate wort very well
>Pitch yeast at 21C
>Ferment at 21C for about 1 week or when fermentation shows signs of calming and stopping
>Prime with sugar and bottle or keg when fermentation is complete
