Notes: This is intended as a sweet cider.
Apples used: 20 lbs Fuji, 9 lbs Gala, 2 lbs Green apples
Honey: Clover Honey
Sugar: light brown sugar 1 lbs, dark brown sugar .5 lbs and
Raw Sugar .5 lbs
First juice all apples and place in a large pot. Heat the liquid, adding the ingredients as it warms up. Once the temp reaches 185 degrees, keep at 185 for 45 min. Then cool with wort chiller till temp is around 80 degrees. transfer into primary fermenter and pitch yeast. Let ferment 4-5 days, take hydrometer reading and taste. If ABV and taste is good, bottle without any sugar , the remaining sugar will carbonate bottles. ABV should be around 10, for a nice sweet taste and with a kick. Let bottles sit for 3 months to 1 year for flavors to mellow and become more pronounced. |

took an hour to sparge.
FG 1009 fucken smacked it dead on cunt! Pure fluke of course given I ended up with 3l more beer than I should :)
So I think I am not getting the boil loss I expect, so my robobrew has shit boilability.
So if I dropped my water and got the right amount, it would be way over gravity. If I do that AND reduce my grain bill will I end up with exactly the same beer?
Anyway, 3.9% and promising pre carbonation. |

Used Weyermann Special W instead of Dingermans SPECIAL B.
Added 3 mangoes puréed in thermo temp70c half hour.
Starting yeast @ 21c for 24 hrs then letting free rise to 26 from there.
OmIT the above recipe is as stated above transfer med from previous Mango-lasi Raison. |

Notes: I generally hit the high attenuation end with Wyeast if I mash at 66 Deg (and even more for a cool beta rest). But here?
The BJCP style guide specifies an original gravity of 1.046-1.054 and final gravity of 1.010-1.015. I normally get 1.046->1.010, =79% for Alt. But to get that FG correctly predicted I need to set 93% custom attenuation?
BU/GU is 1 but about 25% from first wort Saaz, so that's perfectly drinkable. |

I did 4.25 gallons for an OG .034/6
FG came in at .010 after 9 days no secondary.
4/4/15 - Mashed for 75 mins 152-54, iodine test, 1 teaspoon Gypsum, mash out to 162, OG came in at .37 pitched at 70 degrees
4/14 - FG at .011 3.4%
6/16/15 - Mash between 156 to 149 mashed out with 190 tea kettle degree to 153 then poured 175 degrees over the grain bag that was out of the pot after. OG .036 4/12 gals, pitched at 66
6/26 - FG .008 for 3.68%. tastes great into keg
1/30/16 - Mashed 152-52 mashout 160. Sparged with kettle water 175. OG .038 no wirflock tab haha.
2/10 - FG .014!? 3.15% meh. I should keep better notes OG was good same yeast maybe longer mash time?
9/7/16 - mashed between 155 to 150 whirfloc, Est Kent Goldings, .75 biol. .25 at 5 mins, OG .034 danstar windsor at 68 degrees
9/15 - FG .008 for 3.41% tastes smoother and less hopped with the Windor yeast and Goldings.
