Mill the grains and mix with 3 gallons (11.2 l) of 163°F (73°C) strike water to reach a mash temperature of 152°F (67°C). Hold this temperature for 60 minutes. Vorlauf until your runnings are clear, then run off into the kettle. Sparge the grains with 4.3 gallons (16.2 l) and top up as necessary to obtain 6 gallons (23 l) of wort. Boil for 60 minutes, following the hops schedule.
After the boil, chill the wort to slightly below fermentation temperature, about 60°F (16°C). Aerate the wort with pure oxygen or filtered air and pitch the yeast. Ferment at 60°F (16°C) for one week, then allow temperature to free rise to 70°F (21°C). Upon completion of fermentation, add dry hops and wait 2–3 days. Crash the beer to 35°F (2°C), then bottle or keg and carbonate to approximately 2.5 volumes of CO2.

Notes: I have the liquid extract can size set at 3.3lb's, because that's the only number I could find on the net. I guess it's correct.
This recipe does equal the actual abv according to the hydrometer reading.
OG: 1.154
(post wort [aka post yeast-pitch] day-#2 in carboy: 1.024)
FG: 1.014
Supposedly, that should equal 18.3% abv., but this recipe calculator suggests 3.9%. I'm not convinced it's 18%, but it's sure not 3.9% either! Perhaps it is stronger than I think, b/c I usually have a bit of a head-pounding afterward.
Is priming sugar not included in this form? |

In this extract recipe, the oats are not going to provide any sugars for fermentation so the amount of malt extract is greater than the other recipes. Place the oats loosely in a grain bag. Since the oats will swell, avoid packing them too tightly in the bag. Use more bags if needed. Steep the bag in 2 gallons (~8 L) of 170 °F (77 °C) water for about 30 minutes. Lift the grain bag out of the steeping liquid and rinse with warm water. Allow the bags to drip into the kettle for a few minutes while you add the malt extract. Since this is only oats, squeeze the bags to extract the liquid. Add enough water to the steeping liquor and malt extract to make a pre-boil volume of 5.9 gallons (22 L) and a gravity of 1.043 (10.6 °P). Stir thoroughly to help dissolve the extract and bring to a boil.
Once the wort is boiling, add the bittering hops. The total wort boil time is one hour after adding the bittering hops. Chill the wort rapidly to 68 °F (20 °C), pitch the yeast and aerate thoroughly. Follow the fermentation and packaging instructions for the all-grain version.
Begin fermentation at 68 °F (20 °C) slowly raising temperature to 72 °F (22 °C) by the last one-third of fermentation.

Notes: v.2: addition of Carafe produces a great colour, and an almost nutty taste (good).
Poor head retention but happy otherwise! Will do this again.
v.1 the original recipe called for Crystal 120, but this was unavailable, so subbed this is Crystal 80. Colour obviously lighter than desired.
Should have added a fining agent - 3 weeks in the bottle and it's still cloudy, but first bottle was good. I anticipate this will need at least another month to age. |

Notes: For those of you who don’t want to sit around for hours chewing up corn (we know who you are), use the following recipe. Crush the germinated corn coarsely and pour in the brewpot with 8 quarts of cold water. Sit and let sit one hour. Bring it to a boil, add the sugar, then lower the heat and simmer three hours (stirring regularly). Add whatever spices you desire at the end of the boil. In this recipe we use cloves but you can use anything from cinnamon to ginger. Remove and let it sit for one hour. Next, strain the liquid into a fermenter using a strainer, cheese cloth or any other method you prefer. Once it cools to 70° F (21° C), pitch the yeast and ferment at room temperature (between 60 and 75° F) for five days. Rack to secondary and ferment for one to two weeks until clarified. Bottle using 1 teaspoon corn sugar per bottle for priming. Finally, let it sit two more weeks after bottling before drinking.
