Notes: Add 2 tsp of Gypsum to water, based off starting with DC water.
The recipe released from the White House has an error, they mention 1.5 oz of Fuggle in the list of ingredients, but then only 0.5 oz in the instructions. I went with 1.5 oz here.
The instructions are also a little weird in terms of the boil times. They say 'add the honey and boil for 5 more minutes'. So, actually it is a 50 minute boil, not a 45 minute boil.
Other than that, it is a straight forward extract batch.
To get it to qualify as an Amber Ale, had to set the IBU equation to Rager, and the SRM equation to Daniels. I'm open to suggestions on the style (haven't tasted it). |

Notes: Cool wort to 53F and aerate well. Ferment at 53F until approximately 2-5 points from final gravity, then raise the temperature to 65F keep it there for 2-4 days to reduce diacetyl (a buttery flavour produced by some yeasts). It's preferrable to lager for 1-2 months at near freezing before packaging. |

Notes: Citric acid concentration in "Other Ingredients" should be 5%.
Use 1/2lb. lemons for 5-gal of Mash Water (scale up or down as necessary). Remove wax from lemons with hot water and paper towel. Zest lemons and set zest aside. Quarter lemons and add to mash. Remove lemons with spent grain and discard.
Add zest at end of boil.
Pitch yeast cool (64°F - 18°C)
Open ferment at 70°F - 21°C for 3-4 days, watching for signs of slowing activity.
Once fermentation slows, close with airlock and let free rise to ≈ 75°F - 24°C, or slightly above. Stay below 80°F - 27°C.
Leave in fermenter for ≈ 2 weeks, dry hopping with 2-3 days left. |

Notes: Slightly disaster filled first ever partial-mash brew-day. Intended to brew Sara Carter's Bombay IPA. Accidentally brewed this instead. Got lower than expected efficiency. Correctly calculated how much DME to add - but then inadvertently added 1Kg too much giving a much higher than expected OG.
This recipe was very bitter at the lower OG, so hopefully it will turn out reasonably well anyway. Even in the worst case scenario, I'm pretty sure I made beer.
90% attenuation based on what I actually got. Notty is amazin'. |

Notes: Here's my final cut based on info from the brewery. The crsytal 60 seems high but thats what the recipe calls for to get to 12 SRM. I may have to vary the hop additions just a bit depending on the alpha acid percentage. I'll be brewing this next weekend (hopefully). I'll let everyone know how it turns out.
EDIT** Adjust your caramel 60L and shoot for an SRM of 8.

Notes: A really floral Amber ale. Just enough bitterness that everyone will enjoy. Closely resembles Widmer Alchemy ale. Recipes don't get much easier and much better for the extract brewer. Steep your grains at 165 for 45 minutes before your boil when you add your extract. Then remove grains and boil, add your extract. Return to boil, add hops at timed intervals. Cool to 70ish and pitch yeast in a sanitized fermenter. Once your airlock stops bubbling transfer into a glass carboy for 2 to 3 weeks, I Kegged mine but bottling is standard rules of 3/4 cup of corn sugar in 2 cups of boiling water and transfer into bottling bucket or carboy. Then bottle. Have fun with this recipe. It's the most basic you can get for partial mash brewing. Soon you will be adding more grains and using less extract. |
