Notes

Slow ramp from 152 to 168 (20 mins). Pump-recirculated wort during 168 rest then pumped to kettle. Pitched one pack each of Independence & Pub. No Starter. Pitched at 60 and fermented first few days in 50* garage (ester control) before moving inside. Keg'd on Day 10 with dextrose solution from boil plus a little yeast roused during transfer. Left keg at room temp for one week to prime. FG WAS 1.012. Hydro sample was very clear and tasted great. A touch on the bitter side but that will fade.
