Notes

Uses 1-1.5 oz of American oak, medium toast cubes. Cubes are soaked in bourbon (i used jim beam black) for 1 month prior to adding to secondary for 4 weeks before kegging (or bottling).


Notes on yeast: First time using Lallemand London English ale. Pitched using a 0.5 gal starter with 2 packets. Use of Nottingham or verdant IPA should result in a lower FG and higher ABV with a dryer finish.


Dark, warm, rich malty beer with subtle notes of vanilla, oak, and bourbon. Enjoy by the fire with friends and your finest cigar or pipe tobacco.
