Notes

Cane sugar and yeast nutrient addition at 10 minutes

pre-boil 1.057

1.2g sparge

56 IBU projected (hop utilization set to 5%. The actual is around 7-9%.

3 days fermenting at 1.012. Closed sounding valve at 3 days. Dry hopped at 7 days, keep hops in contact for 3-5 days and transfer to serving keg for best results. You can keep the beer in the dry hopping vessel but only if it will be consumed in less than a few days for best hop aroma and flavour.

At 7 days beer is sweet with a bit of bitterness and high tropical, berry, and stonefruit aroma. Natural carbonation is ok but still needs at least 5 more days of carbonation. (total carb time at 10psi was 4 days by this point).
