I plan on adding the amylase after the sparge, which will merely be a wash so that the amylase from the grain will stay active and the temperature will not effect the amylase addition pre boil. (), and letting it sit for another hour for the enzyme to take effect.
Take special care in how you wash the grains this time, as you want the wort to be very clear from the beggining so that the fining agents have less work to do.
most people are adding Yeast nutrient, but both Boston and I hate the metallic flavor, so we will be substituting in raisins, about one box should be more than enough, maybe white table grapes instead so that the flavor is less noticeable than something more caramel like raisins.
The IBU's are a little low I think. I think I would like to shoot a little higher, but I think this is a first great iteration. I really like how Citra pairs with Kveiking, and yes, I am Goober. hopefully it will come across like Moxee in summertime\

Notes: Brewed at the request of friends who loved my I Remember My First Check-in Untapped anniversary sour. Changing hops in this one, and adding salt for the "tears" aspect. This should be ready for election day partying, during which the tears will be of joy or sadness.
Target souring pH: ~3.3 +/- 0.1
Day 1: Mash, 10min boil, add 2 lactobacillus pills. Set souring to ~90°F, hold until target pH is reached (normally <24hrs).
Day 2: Full boil with hops and orange peel, pitch yeast and hold ~85°F.
Day 3/4: Add high krausen dry hop addition. Just dump them in, cold crashing will help drop them.
Day 5: Add lavender (taste to see if more orange peel is needed).
Day 7: Cold crash.
Day 8: Keg with mesh bag as filter. Wash yeast and store. |

Notes: Substitute the pale malt for 6.6 lb (3 kg) pale/light liquid malt extract.
Add the crush roasted barley, black malt, and crystal malt to one gallon (3.8 L) of 160° F (71° C) water. Let steep for 30 minutes. Afterward, strain out the spent grains, sparge with hot water, and collect the liquid extract. Add 1 gallon (4 L) additional water, the malt extract syrup, and all of the hops. Bring to a boil and continue to boil for one hour. When 10 minutes remain add Irish moss. After a total wort boil of 60 minutes, turn off the heat. Then strain out and sparge hops and direct the hot wort into a sanitized fermenter to which 2 gallons (7.5 L) of cold water have been added. If necessary, add additional cold water to achieve a 6-gallon (23 L) batch size. Add a starter culture of yeast when temperature of wort is about 70 °F (21 °C). Preferably ferment at 65–72° F (18–22° C) for about 7–12 days or until fermentation is complete and the beer appears to clear and darken. For best results, “cellar” or age at 50° F (10° C) for 2–3 days to help drop yeast out of suspension, but this is not at all crucial to the quality. Bottle with corn sugar. Age and carbonate/condition at temperatures between 60° and 70° F (15.5–21° C) until clear (about one week). |
