Notes: Target a beginning of boil gravity of 16.3 Plato and reach 22.0 at the end of our 70 minute boil. 5.2 degrees Plato is added with equal amounts of dextrose and brown sugar added midway through the boil. (35 minutes)
Cool the wort to 66F and ferment with Scottish ale strain at 66F until we reach 6 Plato. At this point, we temp up to 73F for the remainder of fermentation. We target a final gravity of 3.2 Plato.
Finished beer is transferred into freshly emptied Templeton Rye barrels for aging. Following aging, we blend in a percentage of fresh beer to taste to preserve body and temper the whiskey/oak character.

7.6 AAU Challenger pellet hops (0.95 oz./27 g at 8% alpha acids)(60 min.)

White Labs WLP004 (Irish Ale), Wyeast 1084 (Irish Ale) or Fermentis Safale US-05 yeast
Step by Step
Crush the roasted barley very fine. Run it through a coffee mill or use a rolling pin to turn it almost to dust. That is critical to getting the right flavor and color with this recipe. Mill the remaining grains as normal and dough-in targeting a mash of around 1.5 quarts of water to 1 pound of grain (a liquor-to-grist ratio of about 3:1 by weight) and a temperature of 120 °F (49 °C). Hold the mash at 120 °F (49 °C) for 15 minutes then raise the temperature to 148 °F (64 °C) until enzymatic conversion is complete. Raise the temperature to mash out at 168 °F (76 °C). Sparge slowly with 170 °F (77 °C) water, collecting wort until the pre-boil kettle volume is around 6.5 gallons (24.4 L) and the gravity is 1.032 (8 °P).
The total wort boil time is 90 minutes. Add the bittering hops with 60 minutes remaining in the boil. Add Irish moss or other kettle finings and the last hop addition with 15 minutes left in the boil. Chill the wort rapidly to 69 °F (21 °C), let the break material settle, rack to the fermenter, pitch the yeast and aerate thoroughly.
Ferment at 69 °F (21 °C). Slowly raise the temperature during the final 1⁄3 of fermentation by 6 °F (3 °C) to reduce diacetyl levels in the beer. When finished, carbonate the beer to approximately 1 to 1.5 volumes and serve at 52 to 55 °F (11 to 13 °C). |

Notes: On the ingredients - substitute the pale ale malt for any decent pale 2 row base malt - I just like the taste the Belgian stuff produces!
I used a 21L stockpot for mash and boil.
Lost roughly 1 litre in mash due to grain absorption.
Squeeze grain bag well on completion of mash - I was able to get 72% efficiency this method (You may need gloves). Nil sparge.
Boil loss was 3 litres per hour. Lost 0.5 litres to trub and chiller.
First and second hops additions into the hop sock. Add final hops loose at 77 degrees and whirlpool for 15 minutes prior to chilling.
Get your yeast out of the fridge to get up to room temp.
When wort is roughly 19 degrees strain With fine strainer into FV to aerate and minimise trub and hops debris.
Take a sample for OG then sprinkle yeast on top evenly and leave for 15 minutes then gently stir.
Close the lid, chuck her in your temp controlled fridge and wait!
I dry hopped at 6 days, transferred to secondary at 10.
After secondary, cold crash for a few days the keg/bottle and leave for at least 2 weeks to condition. |

Notes: Here is a 6 gallon recipe for you. This is the commercial recipe adapted to homebrew scale. Assuming 72% efficiency, boiloff rate of 10%:
10.75# Rahr Pale Ale malt 12 oz of Rahr White Wheat Malt 6 oz of Weyermann Vienna malt
Mash at 152 degrees F, vorlauf, lauter and sparge to yield ~6.8 gallons of wort at ~1.045
Boil for 75 minutes.
Hop additions are:
2 oz of Galaxy at 14.2% AA 20 min from end of boil (38 IBU) 3 oz of Galaxy at 14.2% AA at flame out (~10 IBU)
Fining agent of your choice when you normally add it
Let flameout hops steep for 30 minutes before cooling (simulated whirlpool hops). We get a large amount of utilization in our whirlpool, and this recipe is written assuming you will get ~10 IBUs from the flameout addition. If you choose to cool immediately after adding these hops, you'll need to add another 10 IBUs somewhere else.
Post boil vol ~6 gal at 1.051 OG
Pitch WLP090 and ferment at 68 degrees F for 7-8 days. Final gravity should be 1.008-1.009. Dry hop with 3 oz of Galaxy hops for 5-7 days.
Crash cool and filter or fine, keg or bottle as is appropriate for your process.
