(eqautes to 2l) stir throughly then add back to FV, volume 23l Place a muslin bag over the top of the FV and leave over night (no need to drop pH of water as limes will acidify the water when added the following day) 07-04-2025 @0900 slice/ zest the skins of 25unwashed unwaxed limes and place in a pasterused muslin bag, do not wash the limes, as I want to utilise the yeast on the skins remove/ slice off any remainder of the white of the limes and discard quarter the limes then squeeze the limess in a macerator juicer with 1cm of ginger. throw away the fibre produced (it contributes to bitterness) Add the 1l of lime juice to the FV Add some * ginger plant into the muslin bag , then hang the muslin bag of lime zest/ ginger plant inside the FV and secure the string to the outside of the FV with tape DID NOT ADD YEAST NUTRIENT NOR YEAST i.e. I added yeast for my lemonade last year i.e. 1.5 tsp of yeast nutrient, 0.5 tsp yeast nutrient, 1 tsp of wine yeast (can use champagne yeast) 07-04-2025 @ 1230 OG=1.030, vol 24l Will take 2-3 days to get started Should finish at 1.010 ??? Both DEM extracts are added with 15 Min. remaining. - Cool wort, once wort is cooled to 75* - 80 F or lower transfer to fermenter, top off to bring to 4.1 gallons. pitch yeast when Temp. is 70 or lower. - After Fermentation.... let sit on trub for 5-7 days then bottle, timing is somewhat flexible. - Add 1 Sugar Fizz Drop per 12 oz bottle when bottling. - After bottling let sit for 4 to 5 weeks, timing is somewhat flexible. ===================================================== NOTES: Wheat & Golden DME are added with 15 Minutes remaining in the boil. Apricot extract added at 2nd fermentation transfer, allow 1 - 2 days to sit, timing is somewhat flexible. OR Apricot extract added to wort 10 min prior to bottling.
