This recipe uses a sour blend that contains Saccharomyces (regular yeast for primary fermentation), and several brettanomyaces cultures. Secondary fermentation is necessary and should last several months in order for the brett to develop a nice funk. Understand that brett is a wild bacteria and is typically unwanted in standard ales and lagers, so it's advised to use a glass or stainless steel fermenter. Plastic buckets contain micro abrasions that are hard to clean and can infect future brews. Even with glass or stainless, be sure to practice good sanitation and really put in some elbow grease to cleaning. Good rule of thumb is to dedicate an old fermenter to be your "sour" only one.
