The recipe released from the White House has an error, they mention 1.5 oz of Fuggle in the list of ingredients, but then only 0.5 oz in the instructions. I went with 1.5 oz here.

The instructions are also a little weird in terms of the boil times. They say 'add the honey and boil for 5 more minutes'. So, actually it is a 50 minute boil, not a 45 minute boil.

Other than that, it is a straight forward extract batch.

To get it to qualify as an Amber Ale, had to set the IBU equation to Rager, and the SRM equation to Daniels. I'm open to suggestions on the style (haven't tasted it).

Notes: Sour cherries were frozen, then thawed and pitted, and then frozen and thawed again before adding to the secondary. Added 1/8 tsp liquid pectic enzyme (several years old, so maybe no good) at the time to help clear haze. Lots of secondary fermentation from the cherries and juice. Also added 1 tsp gelatin (softened in 1/4 c cold water) finings. Still some haze before bottling, so added 1/4 tsp powdered pectic enzyme. Bottled with 2.6 oz. corn sugar.

Final gravity 1.003! ABV 8.3%

Notes: In the brew pot add honey,corn sugar, 2 Temple orange peels, and 1 1/2 gallons water.Bring to a slow boil. As soon as boil starts, scoop out orange peel. Continue a slow boil for 30 minutes, skimming any "foam" that forms on the surface. After 30 minutes add 1tsp Irish Moss, continue to slow boil for 15 minutes. Add to primary and bring volume up to 5 gallons. Rehydrate 1 package of "Red Star Pasteur Champagne Yeast". Pitch yeast when temperature of must is 65F-75F. Secondary rack when necessary.
This is my late Fathers recipe. It has won many awards, both in the SCA and in the mundane world. We just opened the last bottle, 20 years old by the way, and it is wonderful! Hope you have fun brewing this one.
