A very solid-tasting IPA. I recommend getting more hops at the end of boil and flameout to help with aroma and add a bit of carapils for head retention. That is the only critique I have at T+32.

Notes: one of many clones, I know. but becoming a favorite in light of how little 3floyds brews/puts on the shelves etc.
1L starter (the day/afternoon before) 1L hot water to dissolve 1/3 cup of sugar and 1/3 cup of the DME. let cool to 80-100 degrees. pitch whole pack of Safale S-04 (optional: and, in addition to the S-04 add about a 1/4 to a half packet of champagne yeast for a higher ABV and a dryer finish)top with air lock or fairly loose bottle top, should see and hear bubble and fermentation within hours (often much sooner) let sit over night.
next day bring 3.5 Gallons (or biggest pot you have with a minimum of like 4" (preferably 6" or more) of clear between top of pot and top of water. to 158 degrees - steep all the (milled) grains.
bring to boil and dissolve the dme and the sugar. when the boil starts to bubble and or foam turn down just a bit to a rolling boil, or just low enough to not boil over while stirring often. add the first 1oz. of hops and start the clock. add an ounce every 10 min after.
cool/let cool and dump into the remaining 2 gallons of cool water (already in the fermenter) cool until approx. 72-78 degrees, pitch / pour in the starter.
let ferment for 1-2 weeks. you could rack it to a secondary after a week, but I've heard and read in blogs etc. that is the preferred method; and after many batches found that leaving it in for a full 2 weeks is just fine.
after 2 week rack into bottling bucket and prime with 3/4 cup corn sugar just prior to bottling.
it's fine to taste at 2 weeks but will be totally ready to go after 4-6. the ABV (shown above) at 8.17% and 123 ibu is a little bit high, but very attainable. I've consistently gotten around 7.56% and right around 100 IBU's every time. (this is 4th batch with very little variation / tinkering with the grain bill a little bit to lighten the color, but little else.)
... So (starting with a pretty easy recipe) a good hearty ale, with a more than substantial ABV and a big hop hit.

THE GOLD LME WAS NOT AN OPTION ABOVE! THE GOLD LME OPTION WAS NOT AN OPTION ABOVE SO I PUT 9.15 lbs of Pilsen LME. When I tried to add GOLD LME it did not calculate correctly. Pilsen would work BUT GOLD LME IS THE CORRECT LME, NOT PILSEN! PLEASE UNDERSTAND THAT IF YOU USE PILSEN YOU WILL NOT HAVE THE SAME TASTE AS TWO HEARTED IPA! I APOLOGIZE BUT GOLD LME IS NOT AN OPTION ABOVE. PLEASE USE GOLD LME! A starter is advised! 2 stage fermentation is a must. Expect aggressive yeast activity within 48 hours. An airlock will NOT handle this. You will need a blow off! 1056 is a super active yeast. It will blow the top off of a bucket or blow up a carboy, no joke. US Safale 05 is a great dry yeast option if you don't have a blow off. Thank you and enjoy your beer my fellow HOP HEADS! Oh, feel free to use 2 ounces of Centennial hops, instead of one, when dry hopping. This would be dry hopping at 2nd fermentation. Also, depending on how hoppy you want it, you could put the hops in for the whole 10-14 days during the second fermentation, 1 or 2 ounces. Or, for less hoppiness, add 1 ounce a week into the second fermentation and just allow to dry hop for a week. The choice is yours. Just depends on what you want and how aromatic and hoppy you want the final beverage. Enjoy. |

Steep at 65-71C for 45 minutes in a grain bag then rinse thoroughly as you fill up the brew pot.
Don't use too much star anise spice.
Wait at least 2 months before drinking this bad boy (consider racking to secondary fermentation). You could even let it sit 6-12 months to ensure whatever bits of star anise that made it into the fermenter have mellowed out.
Instructions for making inverted sugar (scale as necessary):
1 lb sugar (better to use pure cane sugar - I used the brown variant)
1 tsp lemon juice
1.5 cups water
Place all ingredients in a pan
Bring to a boil
Boil for approximately 20 minutes
Original inspiration was from QUAD PISTOLES recipe below. I scaled and tweaked it a little to reduced the alcohol content, and to bring up the IBU a little (as usual!). I don't have access inverted sugar or liquid malt extract. I crushed whole star anise seeds instead of using powder.
Due to the homebrew shop limitation, I made the following swap:
Caramel/Crystal Malt - 80L --> Caramunich III
Biscuit Malt (23.0 SRM) --> Melanoidin Malt

Notes: The extract recipe I found called for steeping the oats, which I learned will not contribute to the fermentables. The best way I've found to account for this is by selecting late addition - boil kettle.

Results:
Color was great! Golden with a bit of haze, not dense. The color held weeks after fermentation.
I think I added too much lactic acid, ph was 4.1-4.2. Flavor was lacking something, maybe sodium or a steeping grain besides oats would help with the distilled water. |
