Notes: Hops schedule: Combined the three American hops and slowly and continuously hopped the boil from 30 mins on, saved 1oz of mixture for dry hop at day 7.

Notes: collect wort as normal
acidify wort to ~4.5 pH
bring wort to boil for a few minutes to sterilize wort.
Cool wort to temp preferred by lactobacillus strain.
add lactobacillus
purge kettle headspace with CO2 at 10 psi for about a minute, close lid quickly, and seal lid to kettle with saran wrap.
Wrap kettle with heating device to keep it at proper temp. place the thermometer on opposite side of heating device.
kettle sour for 2-3 days
check pH every day and purge kettle headspace with CO2 at 10 psi for a few minutes and seal lid to kettle with saran wrap.
When pH reaches 3.4-3.6 it is finished souring.
boil as per recipe and add hops etc.
cool to pitch temp and ferment.

Notes: Mash at 150F for 60 min. Add First Wort Hops when entire boil volume approaches 160F. 90 minute boil. 0 Minute hopstand hops get added at flameout and stand for 45 minutes. 0 min Aroma hops get added at 160F during chilling. Pitch and ferment 66F. When fermentation slows, rack to purged keg on top of bagged (and weighted, you want them submerged but not interfering with dip tube) whole hops and let fermentation finish at 64F for 5 days under a little pressure. Drop to 38F or so and force carb. Carb to 2.0vol and enjoy fresh! |

Notes: Rehydrate yeast for 30 mins. Oxygenate wort for 30mins. Ferment at 18.5c. Dry hop close to end of fermentetion. Chill at 2c for 4 days then rack to keg. Carb to 2.2 to 2.5.
Key here is to get the mash PH down to between 5.2 to 5.4.
Mash for 75mins@ 67c, mash out 76c 10mins, sparge 10 mins, boil 90mins.
