Notes: This recipe will turn out a decent Midwest light beer. A couple notes to consider if you plan to brew this recipe:
1. I grind my popcorn, however, if you plan to grind popcorn make sure you have a sturdy grinder that can handle it, most barley grinders cannot. I broke two standard grinders before I decided to finally purchase a grinder that could handle it.
2. I use Diazyme after I move it into my carboy, before the yeast goes in. The enzyme converts the starches from the corn and wheat into sugars that can be consumed by the yeast. It will give you the boost you need for better attenuation. If you don't like adding Diazyme you could convert the 2-Row into 6-Row, but I don't know what that would do to your flavor profile.
3. Because of the wheat, if you pull this early, it will have a slight banana flavor. I have lagered this a minimum of 3 weeks each time I brewed this, if you try to taste it any early than that you will regret it.
