Lessons Learned:
1. Gravity varies wildly from top to bottom. Next time find a way to pull samples from middle.
2. pH meter temperature correction doesn't work well. Readings are lower at highter temps. Need to quickly cool samples to 80 deg. Small metal container in ice bath would be ideal.
3. Used 0.5 lb rice hulls but sparge was still slow. Next time use full pound for 10 gallon batch.
4. For 10 gallon batches, hang malt pipe from top of kettle to avoid spilling grain into kettle.
5. Plate chiller clogged while transferring to fermenters. Can try reversing flow through chiller to clear clog, this worked when rinsing equipment.
6. Always function test kettle prior to milling grain.
Tasting Notes
Batch C - Prominent pineapple aroma and flavor. Bitterness is not medicinal, but still detracts from perception and enjoyment of fruit flavors. Poor to fair head retention.
Batch A - Much more subdued aroma and flavor profile. No distinct fruit aromas or flavors, except perhaps slight stone fruit flavor. Bitterness lingers on the palate; overall bitterness actually balances well in this version. Poor head retention.
Batch E - Pleasant, sweet, fruity aroma. White wine flavor dominates, with guava, papaya, and piney/resiny flavors also present. Malt character is on the sweeter side. Poor head retention. Bitterness is not overpowering but could be reduced.
Batch F - Intense fruit flavor and aroma.
Batch B - Slight stone fruit aroma, slight orange peel flavor, otherwise unremarkable. One bottle possibly infected.
Batch D - Indistinguishable from batch A. Perhaps slight medicinal bitterness on the tail end. |

Mill the grains and mash at 150°F (66°C) for 30 minutes. Vorlauf until the runnings are clear, then run off into the kettle. Sparge and top up as necessary to obtain about 6.8 gallons (26 liters) of wort—or more, depending on your evaporation rate. Boil for 90 minutes, following the hops schedule. After the boil, conduct a whirlpool, add the Sinamar LME and whirlpool hops, and whirlpool for 30 minutes. Chill the wort to about 67°F (19°C), aerate well, and pitch the yeast. Ferment at 67°F (19°C), adding dry hops after primary (typically 4–5 days), then continue to ferment until complete. Cold crash, package, and carbonate.

Step by Step
Mash the Pilsner, Vienna, and aromatic malts at 151 °F (66 °C) for 60 minutes. Start recirculating wort. Add remaining malts and raise the temperature to 168 °F (76 °C) for 15 minutes. Sparge slowly and collect 6.5 gallons (24.5 L) of wort.
Boil the wort for 90 minutes, adding hops at the times indicated in the recipe. The longer boil will help drive off the precursor compounds of dimethyl sulfide (DMS), found in Pilsner malt. You can add a kettle fining agent if you so desire.
After the boil is complete, chill the wort to 64 °F (18 °C), pitch the yeast, and ferment until terminal gravity is reached. Allow the yeast to free rise in temperature to promote full attenuation, but don’t let the temperature get above 77 °F (25 °C).
Rack the beer, prime, and bottle condition, or keg and carbonate. |

The intent here is to do a mash, set aside the liquor then do another mash to gather around 6.5-7 gallons of 1.100 OG or higher wort. Boil together for 80 minutes.
Age for a bit in a barrel then bottle.
Pasteur Blanc and 95 g of table sugar was used by Mike for 5.5 gallons bottled, intend to use same yeast but adjust sugar down for revision ideas (he thought carbonation was too high) and volume I have on hand. |
