Bitterness: 44 IBU
Alcohol by volume: 5.1 percent
Mash the grain (cracked) in 16 quarts of water at 150 degrees F for 60 minutes. Add 1 tablespoon gypsum to water. Sparge until wort reaches a gravity of 1.010 (about 6.5 to 7 gallons). Boil wort, stirring occasionally, until batch reaches a volume of 5.75 gallons. Add 1 ounce of Northern Brewer hop pellets and boil for 60 minutes, adding 1 ounce of Fuggle hops with 10 minutes left in the boil, and another with 1 minute left in the boil. Remove from heat and cool to 70 F.
Fermentation: Aerate well and pitch one activator pack of Wyeast 1084 Irish ale yeast. Let ferment at 70 F for one week. Rack to secondary and let sit at 70 F two more weeks. Prime with 7/8 cup of honey, dissolved in 1 cup of warm water. Bottle. Sample after six weeks.

Notes: After Ron Pattinson's Tetley 1945 recipe with higher crystal malt to jump the colour up to brewer's friend chart.
Used EKG as those open. Lallemand Notts yeast. And made a batch of Invert Sugar #2 which looked pretty dark. This won't be a pale mild! SG hit 1.040.
Wort was very malt forward and of course sweet, like the malt extract you had as a kid; hops providing a bitter finish. |

1- Sour wort with probiotics (went with Plantarum).
2- Ferment with Saison yeast.

4- After around 3-4 months, make a big dry hop.

3 lbs pie pumpkin (boil)
4 oz molasses (preferably blackstrap)
4 oz maple syrup (preferably grade B)
1-3 tsp spice mix (Editor: see below for recipe)
2.5 lbs pie pumpkin (secondary)
Mash at 156° F for one hour, sparge per your setup to collect ~6.5 gallons wort. During your mash your pumpkin should be in the oven roasting (375 1 hr, toss with brown sugar and some spices, back in oven for 10 min)
(optional) Toss your cubed pumpkin in brown sugar and spices.
Toss your hops, boil for an hour, and kill it. I toss my spices in at flameout (1 Tbs)
