A Black Saison, brewed with oats and wheat for a silky mouthfeel, Spicy hops and Carafa Malt for colour, then aged in red wine barrels. On the nose there's cola, chocolate, coffee, mint humbug, warming oak, and spice. The myriad flavours touch on treacle, ripe banana, espresso, brandy, and a clean herbal warmth. Addition of the grains of paradise help to accentuate the peppery spiciness of the yeast.

Fermentable Maple Syrup added to whirlpool at 170F for 5 minutes.

Sparged with 2 gallons water to get full extraction.

Granola toasted in oven at 350 for 15 minutes.

Racked to secondary onto peach puree, apricot puree, vanilla bean, and granola after one week of fermentation
5.
Stabilized in keg with K-meta, then added 6oz maple syrup and shook keg well. |

15-20min protein rest at 165F
30min light boil, then cool down to 155F, put in with the rest of the mash.
fine grind the rice before cereal mashing
pureed 2lbs of apricots and rainer cherries then boiled them in a pot for 10mins and let it cool down to 70F |
