I didn't take any notes on the outcome of this beer. From what I recall, it was corny sweet and tasted more like a flawed brew than a shitty style, pretty sure the batch was dumped. I'm not giving up on this though.
Not sure how to rebrew with more promise because the recipe looks pretty good, maybe chill out on the corn and add rice or more base malt and sugar or something. Make sure yeast pitch is ok.

brew day went fine. 2.5 hour mash (because of scheduling) got the g40 mash recirc working well the wort was really clear.
decided to leave out the cane sugar, had good 70% efficiency for 1.074 wort and ~8.0% expected abv. that will be plenty.

added hops, water calc is being weird or else i dont understand. for balanced profile its saying i need 100ppm and that my starting water is 0.something when it should be 50 something to start with?? could add baking soda to increase it but ive never had to do that before??

getting more real/practical. swapping hops and yeast for some stuff that i have on hand. dropping efficiency down.
i dont have faith the flaked corn will add any gravity points. do you need to cook it first?
still need to figure out what water profile for this.

corn syrup too expensive. could go sugar or grits, but lets take this opportunity to use flaked corn. similar in price to grits. never used before. maybe get different flavor than grits. i dont think you need to cook them, so simpler than grits. less efficient than corn syrup so boost the grain a little and add a lb of sugar.

getting pretty real. worried about using 32% corn sugar so reducing that to 20%. prob will brew on old system but efficiency will prob be high with the sugar, adjusting up to 68. Might use lutra....
adjusting grain bill. prob dont want to use karo since it has vanilla. comes in 32floz jars which is about 2.75 lbs. there are some in amazon that dont have vanilla but like 10 bucks, we need something cheap for the philosophy of the brew, not shipped. or else might as well just use cane sugar.
consider using citra noble or some other lager hop you have on hand other than cluster.
should consider water profile...

getting realer. adjusting efficiency to 60s and adding a half pound base malt to get to 8%. could consider using cooked corn grits instead of corn syrup for more authenticity or even the real flaked corn. but. never brewed with corn syrup before so itd be nice to add to my resume.
im thinking we could package in 22oz bottles.

a lot simpler than the official recipe. not sure if all that corn syrup/sugar would fly but elsewhere they said use 1/3 corn. im just using syrup and sugar to try to ensure my final gravity will be low.
using cluster in the recipe but could/would probably substitute for something else that i already have on hand. maybe millenium

Notes: KAYON AND BRAZIL ARE THE LAGER
KAYON FINE AND RWANDA ARE THE ALE
BG 1048 - 72% efficiency. This would bring beer out at 5.4%.
Thus have added 1.7L of boiling water.
Power cut - boil cut for 20 mins half way through
OG 1060. Seems high? Not sure why. Got 22L yield on the 25L (plus 1.7L) - maybe excessive boiling? ITS HIGH BECAUSE OF LACTOSE STUPID!
10L fermented in office at 15C with S23
10L fermented at flat at 18C with US05
LAGER YEAST (grey taped conditioning tank) accentuates down to 1.020. ABV = 5.25%. Does this include lactose?
ALE YEAST accentuates down to 1.014. ABV = 6%.
Why does ale yeast ferment further? Lager fermentation temp wasnt very stable
15g sugar per 4L

Mikeller says 50g per 500l. Thats 10g/L. Compared to 16.6g/L for Ancoats Coffee.
I think we did same amount of liquid as Mikeller, but lower concentration.

2 ounces French Medium Toast Oak Beans Soaked in Chardonnay for 6 months
Special Instructions / Notes:
First appears in Everything Homebrewing Book.
After cooling, pitch only the Belgian ale yeast. Begin soaking your oak in Chardonnay.
Transfer the beer to secondary and pitch both Brettanomyces strains and add about a quart of basic starter beer to give it some extra food. Walk away for 6 months.
After 6 months, taste the beer, if there's enough “funkiness” for you, add the oak beans (sans wine) and age for 2 to 4 weeks and then package. Your beer should be at a low terminal gravity (around 1.008) to prevent bottle bombs. Carbonate highly and enjoy. |
