Notes: 3 small pumpkins (approx 4kg unprepped weight, ~3kg prepped/uncooked weight) sliced into chunks, sprinkled with demerara and light moscovado sugar and sweet cinnamon powder and then roasted in the oven for 2 hours at 180oC. Will be added to the mash.
Yeast is now second generation yeast used in the previous 'Timmy Ts and Summer Storm Ales.
Mash duration aprox 75 mins = 15 mins to settle grain bed and through flow and then 60 mins at 68oC |

Notes: Serrano Peppers - should be used raw. Cut open, remove seeds and membrane of only 1/2 of the peppers use the membrane and seeds of the other half of peppers, chop all of the peppers into approximately 1/2 in sq pieces and soak in cheap Vodka for 30 min. Strain vodka and pour serranos into the secondary. Let condition for 3-4 days, tasting daily until the right level of heat is achieved.
??? Brew date: 7/15 - should we roast the peppers before putting them in? May take away from the heat but could add to the smokiness..... |
