Notes: Primera producción de la segunda temporada.
El lúpulo es el cultivado este año por mi y le añadimos Simcoe para el Dry Hoping. El amargor que nos dará el lúpulo Cascade y Colombus es una incógnita ya que la fecha de recolecta también lo fue para mi.
Haremos un hervor de 70 min para asegurar que más o menos nos acercamos al IBU deseado.
Usaremos la levadura SAFALE - 05 ya que la hemos usado otras veces y nos ha funcionado muy bien.
Además estrenaremos la cámara de fermentación nueva dejando la temperatura a 18ºC.
- Una vez acabada la fermentación, esperare 48 horas haremos un trasvase.
- Bajaremos la cámara de fermentación a 0°C y Haremos un periodo de frío de entre 2-3°C de una semana .
- Para hacer hacer el dry hoping, subiremos de nuevo la temperatura a 15°C haremos un Dry hopping en dos adiciones.
- La mitad de cada Lúpulo durante 3 días.
- La otra mitad otros 3 días.
En nuestro caso embotellaremos y dejaremos a una temperatura de 18ºC tres semanas antes de consumir.i |

Notes: Ferment for 7 days, then ramp up temp a degree every 6-8 hours to 71 for diacytyl rest, leave for a day or two, then drop temp to 60 for 24 hours. Add cocoa, ancho chilies and vanilla beans and age for 5-7 days. Crash beer to 35 for 48 hours. Carbonate to 2.25 volumes.
Go with cheap Vanilla beans since flavor nuances will be lost in this beer.
Prep vanilla and chilies by slicing lengthwise to increase surface area and impact on flavor. Consider making a vodka tincture with the chilies, vanilla and cocoa nibs. |

Notes: Preheat MLT and HLT with a gallon of 175-180 degree water.
1. Add quartered and scraped vanilla beans after beginning of active fermentation. Sanitize with 1/8 cup vodka.

Notes: Added a hop tea to the bottling bucket of 1oz Centennial, 1oz Idaho 7, and 1.5oz Mosaic. ~1lt of water @155F then left to cool with hops for about an hour. Strained and added to bottling bucket with priming sugar prior to syphoning fermenter.
Tasting notes -
OH wow that's way more bitter than I had intended. The hop tea tastes weird at first, but after ageing in the bottle for 2 weeks or so it tastes like brewery quality dry hopped beer. Huge hop punch. Doesn't taste as "freshly opened pellet bag" as just dry hopping though. The Idaho 7 completely overwhelms the other hop additions (which is good because I did want that for THIS batch) I'd stick with Centennial + Mosaic + Cascade/Citra/mandarina combo for the fruity kick this one is very piney and pithy, and I'd rank the IBU at more like 45-60.
Things I'd change-
Grain bill is perfect, but I think I'd keep all hop additions to no longer than 20min because the IBU is incredibly deceiving when using this many hops. I'd also probably back off of the Idaho 7 additions and swap it out for something more fruity like Citra or Galaxy. |
