This turned out really well. A super clear red that has a crisp finish. If anything, I would up the IBU to 30 and leave everything else the same. |

Notes: This wild Ontario ale yeast was isolated from an apple in a local orchard. Wild Thing produces distinct clove, spice, and subtle banana and apple fruit aroma. Beer is clear - (no haze)
Beer is too bitter for style
All of these things are absolutely true.
