Use Epsom Salt, calcium chloride and calcium sulfate additions to adjust water profile to about 175–200 ppm chloride, 75–100 ppm sulfate, and 125–150 ppm calcium.
Mash at 149°F (65°C) for 60 minutes or until conversion is complete. Add half of the water salt additions to the mash and the rest at sparge. Add the FWH hops during runoff, immediately after vorlauf, and allow them to steep in the hot wort as the mash is sparged.
Boil for 60 minutes. Whirlpool for 40 minutes (from start to rest) following the hops schedule.
Pitch the yeast and ferment at 67°F (19°C) for 2–3 days, then allow the temperature to rise slowly to 73°F (23°C) by the end of fermentation to ensure full attenuation. When fermentation reaches 1.5–2° Plato from terminal gravity (1.020–1.022), add the first dry-hop addition. About 4 days later, add the second dry-hop addition for another 4 days. Package at 2.6 volumes of CO2 and consume fresh.

Nice enough at bottling. Could be roastier, choclatier and have more body - bigger all round next time.

410 is slightly undercarbed. Really complex, fruity, tart, dry, and refreshing. Might be outstanding with a touch of spicy-grassy hops or a touch of pine, maybe some nutty, bready malts to balance the tart fruitiness and add some body.

Both 1010 and 410 are delicious in their own right. The 410 has more yeast character. It's tart, dry, refreshing, and gently spicy. The 1010 highlights the hops, fruity, citrusy, dry, and more mild on the yeast notes. I would make both again, or continue to do this split batch and fiddle with ferm. temps, hops, or grist.

Notes: Steeped grains for 20 minutes before boil.
Made a yeast starter.
Primary temp fluctuated between 17C and 21C. Maybe down to 16C - winter temps. Fermentation not visible until 48 hours.
Primary for 12 days, not sealed. Opened maybe 6 times total to check fermentation.
Transferred to secondary with racking cane. First time unsuccessful, so I had to refill siphon with sanitizer and do it again.
Bung was still wet when attempted to put on. Pressed it too hard and it entered carboy. Temporarily covered with unsanitized aluminum foil for 24 hours.
Boiled 300ml of water and added 1/2 cup corn sugar (dextrose). Worried about 1 gallon of headspace in secondary. Added dextrose and installed bung and airlock. Filled airlock with vodka.
Bottled on 02/19/2014.
Update: 07/22/2014. Forgot to take tasting notes :(. But I remember it being really good despite my conceived screw-ups. |

Mash grain in 2.266 gals (9.064qt) of water at 152° F for 90 minutes. Vorlauf 2-4qt and let drain at a trickle.
Sparge with 2.808 gals (11.232qt) of 168-172° F water (add near boiling). Vorlauf 2-4qt and let drain at a trickle.
Sparge once more with 2.808 gals (11.232qt) of 168-172° F water (add near boiling). Vorlauf 2-4qt and let drain at a trickle.
Collect total of approx 6.75 gallons of wort.
Total boil time is 60 minutes.
Add hops at beginning of boil.
After 30 mins of boil, add second hops.
15 mins prior to flame out, add Irish Moss.
10 mins prior to flame out add third hops.
10 mins prior to flame out, submerge wort chiller in wort.
At flame out, whirlpool. Cool to 69° F. to pitch starter. Oxygenate-aerate well.
Ferment at 69° F for seven days then rack to secondary fermenter.
Continue fermentation for seven more days until gravity is about 3° Plato (1.010) or fermentation is finished. Let settle. Rack, prime and bottle. Age seven more days before drinking. Or Keg and drink in a few days.
