A low mash temperature is recommended to create a light, dry easy drinking beer. Mash temperature of 147° - 149°F.
Fermentation Schedule:
Primary fermentation of two weeks at 66° - 74°F, and
a secondary fermentation for 1 to 2 weeks. You can add the tart cherry concentrate to the primary after fermentation is complete, or add to the secondary. You may notice some renewed fermentation. Wait one to two weeks and make sure fermentation is complete before bottling or kegging.
BREWER’S NOTES:
This is a pretty straightforward American wheat beer recipe. The base is part 2-row barley and American white wheat, with just a
little bit of aromatic malt for character, and a single hop addition for bittering.
This is a great beer to enjoy in the late summer and fall!

Directions:
Mash the malts with the mash hops at 154°F (68°C) for 30 minutes. Raise to 170°F (77°C) and hold for 15 minutes. Sparge at 170°F (77°C) for 45 minutes. Collect 6.5 gallons (24.5 L) of wort.
Heat to boiling and boil the wort 60 minutes, adding hops at the times indicated in the recipe. Adjust original gravity post-boil with reverse osmosis water as required.
Chill the wort to approximately 68˚F (20˚C). Pitch yeast, and ferment between 60 ˚F and 68˚F (15.5–20˚C) until complete. Prime and bottle condition, or serve from keg if naturally conditioned during aging.

7.5 lb. (3.4 kg) Briess Golden Light Liquid Malt Extract
12 oz. (340 g) Briess Bavarian Wheat Liquid Malt Extract
1.3 lb. (590 g) dextrin malt

Steep the dextrin malt, crystal malt, chocolate malt, and mash hops in a grain bag at 154°F (68°C) for 30 minutes in 1.5 gallons (5.7 liters) water. Remove the grains and mash hops and fully dissolve the malt extracts in the hot wort. Adjust kettle volume to 6.5 gallons (25 liters) with reverse osmosis water. Proceed with the boil and follow the remaining recipe as above.

Saint Matthew the Tax Collector is the 7th of 12 brew sessions in the Twelve Apostles beer line. Each of these 12 brews are American Amber Ales. Experimentation with water profile, temperature variations including mash temp., grain bill, ambient temp., hops varieties and yeast strains provide endless opportunity to learn about and improve this beer over the period of 1 year (2016).
American Amber(Red) Ale with a sharp bite from a carefully chosen selection of aroma hops.
American 2-row pale ale malt, American Crystal 60L and Victory malt rounds out the grain bill.
Magnum hops adds a balanced bitterness, whole leaf Cascade and Sorachi Ace hops adds a distinctive grapefruit and citrus flavor, Ahtanum hops adds a distinctive grapefruit, citrus, floral aroma.
Mash temperatures in the range of 152°F to 156°F creating a wort with a nice balance of fermentable and non-fermentable sugars.
