Mesking på 67 grader i 60 min. Utmesk på 77 grader i 5 min hvis du har mulighet til å øke temperatur i mesken.

Notes: This is a version of the traditional Australian Sparkling Ale, the only existing version is made by the Coopers brewery in Adelaide South Australia.
This is my version using traditional Australian Pride of Ringwood but with the addition of EKG which is used somewhat is Australian traditional beers.
No late flavour hops should be added to this style!
(Though I do add a pinch of EKG in the whirlpool for little interesting aroma) |

Notes: WLP007 - Dry English Ale yeast. Love this yeast for IPAs: it ferments clean, fast, and drops super clear, super quick. Fermented at 62F for 6 days, then raised the temp to 68F for 8 more days to help the yeast finish up.
Dry Hops:
Racked to secondary then:
4oz Amarillo/Citra/Centennial/CTZ (1oz each) for 5 days
3oz Amarillo/Citra/Simcoe (1oz each) Added day 5 for 4 more days
Rack to bottling bucket/keg on day 9 in the secondary.
The recipe for this beer started off as something close to Pliny, and evolved into the recipe above. I love using Amarillo, Simcoe, and Citra together, especially for dry hopping.
Tasting Notes: Aroma is heavy citrus and tropical fruit with lots of oily, resiny character. Taste is more of the same. A little malt sweetness up front, then boom: Hops. Finish is dry and bitter, but the bitterness isn't harsh and doesn't linger.

Notes: - First dry hop charge at high krauzen (three days from day 1 to day 4).
- Second dry hop charge near the end of fermentation, but while fermentation is still active (7 days from day 7 to day 14).
S-04 is good, but if you can get VOSS Kveik, it is highly recommend.
If you do use the VOSS, ferment around 28-29C. You will dry hop 24 hours after pitch, and again 48 hours after pitch, VOSS works super fast.
It is suggested to reverse Chloride to Sulfate ratio, chlorides around 100, and sulfates around 50 will add to the haze you are looking for in a NEIPA. |

Notes: Step infusion mash: add 4.5 Gal of 130°F water to the grains. Stir, stabilize and hold the temperature at 122°F for 30 minutes. Add 2.5 Gal boiling water. Add heat to bring temperature up to 150°F. Hold for 60 minutes.
After conversion, raise temperature to 167°F lauter and sparge with 9 gallons of 170°F (77°C) water. Collect about 14 gallons of runoff for the wort. Add bittering hops and bring to boil. Boil time is 75 minutes.
Fermenting and Conditioning
Ferment around 68°F (19°C) for four to six days. Transfer to secondary fermentor and add 0.5 oz (14g) crushed coriander seed. Age for two weeks. Condition above 60°F (15.5°C) until carbonated and clearer. |

Notes: Rye Wit Recipe from basic brewing radio. It is a low gravity beer just coming in at 2.1% ABV. James' recipe is for 4.5 gal,
scaled to 2.5
I am really excited about this beer. It turned out fantastic. For a 2% beer or compared to any percent beer it is dynamic.
It is extremely well balanced. The Dry hop used, Australian Summer, goes perfectly with the style. It has a clean palate with a spicy zing that fades quickly with a faint flower taste. I do not like a harsh and biting hop presence. It is not a hoppy beer, but would appeal to those who like the bittering character of an appropriately hopped beer. It is not thin or watery. The mouth feel is full and coating, presenting as a much bigger beer.
The next time I brew this I am going to experiment with another dry hop ( australian galaxy) just to see what difference would be.
