Notes
Long list of fermentables is just to use up inventory.
Chocolate will add some bitterness. Make thin paste with a little wort and cocoa before adding to the boil for about 10 minutes.
Or, as it turns out, add the chocolate extract at bottling time, doing a taste test to determine amount. Also experimented with some anise extract for final 2/3 gallon.
Use 2 packs of dry yeast, or starter with liquid yeast.
