- 154°F (68°C), 30 min – Alpha-amylase, malt fullness.
- 162°F (72°C), 15 min – Complete conversion.
- Mash out 170°F (77°C), 10 min.

Fermentation:
- Chill wort to 48°F (9°C).
- Pitch large starter (2L) for healthy fermentation.
