Notes: Mash pH at 20 minutes = 5.8, stirred and circulated another 20 minutes = 6.1. Interesting as I also added a few grams of malic acid but the pH kept rising. Apparently the mash pH calculator is onto something. No original gravity checked via hydrometer. I should have compensated for mash pH earlier in the process

Notes: Mash at 150 for 60 minutes.
Chill wort to approx 160 deg and use a pump to whirlpool for 30 min adding in majority of the hops.
Fermented @ 85 degrees in temp controlled conical, keeping constant temperature.
Recommend using a blow-off tube for the Kviek yeasts.
Primary activity done after 2 days. Terminal gravity reached on day 4, final gravity 1.01.
Remove blow off tube and put Co2 on fermenter. Dry hop @ day 5 after dropping the temperature to low 60s. |

Notes: Scaled up version of my "Hoppy IPA" recipe. Split wort into 2 corny kegs and fermented under pressure with their own spunding valves. Pressure ranged from 10-20 psi, temp ranged from 68-76F. Cold crashed on day 6 and pressure transferred (5 gals) to serving keg on day 8 (same day as photo). Aroma and tastes are hoppy, enjoyable bitterness, with slight citrus and floral notes. |
