Notes: Mill the grains and dough-in targeting a mash thickness that will enable your system to achieve the necessary pre-boil volume and gravity. Hold the mash at 150 °F (66 °C) until enzymatic conversion is complete. Infuse the mash with near boiling water while stirring or with a recirculating mash system raise the temperature to mash out at 168 °F (76 °C). Sparge slowly with 170 °F (77 °C) water, collecting wort until the pre-boil kettle volume is around 6.5 gallons (25 L) and the gravity is 1.052 (12.9 °P).
The total wort boil time is 90 minutes. Add the bittering hops as soon as the wort starts boiling. With 30 minutes remaining in the boil, add the second hop additon. Add Irish moss or other kettle finings with15 minutes left in the boil. Add the remaining hop addition at 5 minutes. Chill the wort to 65 °F (18 °C) and aerate thoroughly. The proper pitch rate is 16 grams of properly rehydrated dry yeast, 2.3 packages of liquid yeast or 1 package of liquid yeast in a 2.7-liter starter.
Ferment at 65 °F (18 °C) until the yeast drops clear. Allow the lees to settle and the brew to mature without pressure for another two days after fermentation appears finished. Rack to a keg and force carbonate or rack to a bottling bucket, add priming sugar, and bottle. Target a carbonation level of 2.5 volumes.
FOR COCONUT:
Toast ~1lb of unsweetened, shredded coconut on parchment paper at 250 degrees until golden-brown. Broil at lowest temp if needed for final browning.
Fill hop-filter with coconut and add directly to cold keg. Flavour will start to become apparent within 24 hours, and slowly grow over time. |

Toast unsweetened, flaked coconut with no preservatives 5-10 minutes @350, stirring every 2 minutes until golden brown.
You can also create a tincture letting the toasted coconut sit on coconut rum or vodka for 1 week prior adding to the primary or secondary for 1 week prior to bottling.

Notes: SMaSH beer made with Golden Promise malt and Southern Passion hops.
I had a stuck fermentation so I swirled the fermenter to rouse the yeast, maybe 0.5 packet of US-05 isn't enough to get the job done on its own. Because fermentation took a bit longer, I did add another 0.75 oz (beyond what recipe calls for) of Southern Passion a few days before packaging because it had been about 10 days since the last dry hop and I wanted to make sure I was getting the full effect of this hop variety.
Ended up with a very drinkable beer, definitely hop-forward and maybe a little too much so (but it is a SMaSH beer so not a surprise with a simple grain bill). The Southern Passion tasted pretty much as described, with tropical fruit notes being prominent, with some light citrus notes detectable as well. |

Removed grain bag and squeezed the hell out of it

Beer is fermenting @ 68º per usual basement temp.

Notes: The aim here was to try an IPA that was entirely late hopped.
1/3 of the Mosaic went in at 15 min (I boiled for 45 min previously, but was this necessary?)
1/3 went in for a 50 min hop stand at flameout - temp was about 95c to start, cooling to about 80 by the end of the stand.
Then the plan was for the remaining 1/3 as dry hop.
Efficiency was low - 63% or so - possibly because the hops were all pellet and without any leaf hops to soak up the wort, I got a lot of wort out of the kettle.
So as I was low on OG, I added 250g of DME to increase it
Also I ran out of whirlfloc tablets, so none used here. * though actually, it was pretty clear by the time it came out of the bottle.
