Notes: Add pumpkin puree during main boil, just after steeping. Add spices at the end of the boil, steep for 15 minutes (DO NOT BOIL). Also possible to take a small sanitized pot with the spices to the side at the end of the boil to steep separately while you chill your wort. Strain and add back into wort before fermenting. This will leave very fresh and clean spice flavors, boiling them will dull them out. I plan on running this batch in a fermzilla at 10psi then coldcrashing for 2 days before bottling. This recipe was taken from "How to Brew" by John J Palmer. Should be a good one! |

Notes: Bees aren’t the only one’s who Mead Honey.
Brewed on or around 10th of December, 2022.
Left in fermenter until 15/08/2024.
Cold crashed to 1 degree Celsius.
Back sweetened entire 42L with 500g of honey.
Bottled 12L.
Bottled Mead tastes really dry. The mead is super clear, and the colour of watered down Corona.
Could be confused with a dry white wine, even after back sweetening is taken into consideration.
Remaining 30L kept at 1 degree Celsius. |

A 9.2% Double IPA aged for 21 months in a 1965 Invergordon cask with 30 kg of fresh highland strawberries. This beer is a riot of whisky, caramel and strawberry, all tempered by a toe curling bitterness enducing rapture in all who taste it. Who needs champagne? Rack into a secondary fermenter and add your strawberries. Use a blow-off rather than an airlock as the fermentation can get pretty wild as the yeast starts using the sugar from the strawberries.
