Dette er i stor grad oppskrifter fra ganske tidlig i craft beer-æraen, der mange av vinterølene var i en litt mer klassisk (engelsk) winter warmer-styrke i USA (rundt 6% ABV). Mange av ølene ligger nærmest en slags amerikansk brown ale stilmessig, men er heller ikke så langt unna en (svak) engelsk strong ale eller mørk strong bitter/ESB (bare med lavere bitterhet). Dette gir nok en veldig pintable, men maltprofil-messig også ganske raus/kompleks jule-/vinterøl.
Gjennomsnittskarakteristikker i disse ølene:
Krystallmalt: 0,79 kg på 191 EBC.
EBC: 45,75
Gjærtype: WLP002 er den mest brukte
Bitterhumle: Willamette er den mest brukte
BU/GU:
Late hops: Tettnanger mest brukte (hvis US Tettnanger - mer lik Fuggles?), deretter Fuggles/Styrian Golding, deretter EKG, Hersbrucker, Willamette ("amerikansk Fuggles") og Mount Hood
Mengde late hops: ~60 g på ~19-22,5 L

Tenkte egentlig 0,794 kg av TF Crystal Malt II (200 EBC), men den har de visst sluttet å produsere, så da må det bli en mix mellom Crystal (163 EBC) og Dark Crystal (275 EBC).
Har litt dårlig erfaring med WLP002 i fat (fortsetter å gjære ned ølet til veldig lav FG når den virvles opp), så går heller for WLP005/WLP007/BRY-97/New England/Verdant/S-04.

Dette ølet kan fungere som utgangspunkt for eksperimentering med utbytting av enkeltingredienser. Som f.eks.:
- Ulike humler: East Kent Golding, Fuggles, Hersbrucker, Mount Hood, Tettnanger
- Ulike gjærtyper: WLP005/WLP007/BRY-97/New England/Verdant/S-04
- Ulike vannprofiler: bare kalsiumsulfat vs. bare kalsiumklorid, etc.
- Ølet kan også lages i en sterkere versjon ved å uppes til OG 1.068-1.074 og en ABV på 6,8-7,5%.

Notes: 5 oz of stove top roasted cacao nibs made into a tincture with 8oz of vodka. Soaked and shaken for four days. Frozen for 24 hours and the sludge scraped off.
3 oz cacao tincture left added at end of boil- 5 min.
Steeped 2lbs dark grains at 168 for 30 min.
