First Saison so I want to use someone else's recipe; we'll revisit after first brew. Probably drop the OG and ABV for the next batch.
Lowered Pale DME to 4 lbs from 6 lbs. OG was way too high. ABV ended up @ ~9%.
Way too boozy. Letting it sit for a while to see if it cleans up.
Instructions:
As always, clean and sanitize cold side equipment and ensure hot side equipment is clean.
1. Collect 6 gallons of water in kettle.
2. Add all fermentables.
3. Bring to boil.
4. Start timer for 90 minutes.
5. Add 1 oz Hallertau hops.
6. Add 1 oz Hallertau hops at flame out.
7. Cool wort to fermentation temperature.
8. Transfer to fermentor.
9. Oxygenate wort.
10. Take a gravity reading.
11. Pitch yeast and seal. |

Notes: Using Gigawort:
Add StarSan to kettle and empty it through ball valve and attached hose (mainly to sanitize the ball valve and hose)
Add 2.10 gallons of water and 2g CaCL2.
Bring water to 170 on 1600 Watt setting.
Cut heat.
Add DME and stir.
Use 1600W setting to heat back up to 170 and then switch to 600W setting to keep it there.
Add whirlpool hops and stir/whirlpool for 20 min.
After 20 minutes, add chiller into kettle for at least 30 seconds.
Cut heat and chill to 65.
Transfer wort to fermenter and pitch.

Notes: Gravity came out at 1.14, which is a bit higher than predicted.
The 1056 was used to make a sierra nevada pale ale about 1.5 months previously and the yeast was recaptured. Since all the yeast was used I assumed that the cell count doubled.
For the 1272, it had a best use by date of 10/31, which this date was passed by 1 month. I used the whole pack since I did not have a beer planned for several weeks and needed to use it up. Also wanted to toss everything at this beer since the alcohol was so high.

Add 2oz Centennial hops and boil for 60 minutes
Add 2oz Cascade hops and boil for 30 minutes
Add 2oz Cascade hops and boil for 10 minutes
Add 2oz Azacca hops and boil for 2 minutes
Add enough bottled water to bring the specific gravity to 1.053
Cool wort to 70 degrees
Add 1 pack of Safale US-05 yeast

Kegging:
Keg and set CO2 to 20psi for 4-5 days
