Notes: Fill kettle with 2.5 gallons of water and add steeping grains. Steep until temperature reaches 112 F and hold temperature for 10 minutes. Continue to raise temperature and remove steeping grains when temperature reaches 170 F. Bring to boil and add extracts. Add hops at specified intervals. Cool wort to 65 degrees and very slightly under pitch the yeast, approximately 4/5ths of Wyeast packet (do not break the starter pack before pitching). Ferment at 68 degrees for until Final Gravity is reached (about 7-14 days). |

Notes: This started it's life as a clone of "Grant's Imperial Stout", and called for these specific ingredients: Edme SFX Dark Unhopped LME, Alexander's Unhopped Light LME, M&F dark dry extract, and 5oz centennial hops for 60 minutes and then 1oz dry hop
Only steep grains in 1 Gallon of water, then add a second Gallon for boil (total boil volume should be about 3 gal.
Make a starter or use two smack packs...
For the oak, soak the chips in cheap bourbon for a week to extract tannins, then blot dry and soak again in 10 oz good bourbon. Add the bourbon to the fermentor (estimate adds about .5% alcohol for a 5gal batch... (
