Notes: Chimay Blue stats (from Brew Like a Monk):
- OG = 1.077
- ABV = 9%
- Apparent attenuation: 89%
- SRM = 40 = WRONG (should actually be around 22)
- IBU = 35
? Caramel 150 instead of dark candi sugar
- also replaces the Special B
? if using Caramel 150 use dextrose to increase ABV and attenuation (dry)
- ? use biscuit malt instead of melanoidin (Aromatic)
Dark malt for colour adjustment
CaraPils for head
Pils as base
Munich for biscuity-ness
- may need to boost this, as don't want to mash Aromatic (like a super Munich, very biscuity) so consider using more Munich instead e.g. 15 - 20% Munich instead
Have to mash melanoidin malt:

Notes: Smell of zesty orange peel. Fresh tasting with good body and notes of freshly crushed coriander seeds. Head is aggressive on the pour due to high carbonation, but settles comfortably after a few minutes.
Rated first place by numerous brewery guests between brews 1-7. Recommended for submission into homebrew contest, but too precious to give up. All gone now!
>malt extract can be light or extra light
>yeast should be Belgian Wit (wheat) beer type
>use light honey
Directions for 5gal batch:
O.G.: 1.056-1.060
F.G.: 1.008-1.010
Bitterness: 18BU
Colour: 4SRM (8 EBC)
Alcohol: 6.3% by volume
Add malt extract, honey, and boiling hops to 7.5L water and boil for 60 mins. Add the flavor hops, ground coriander and orange peel for the final 5 minutes. Add the aroma hops for the final 1-2 minutes of boiling. Strain, sparge, and transfer immediately to 7.5L of cold water in the fermenter. Top off with additional water to make 19L. Aaerate the wort very well. Pitch the yeast when the temperature of the wort is about 21C. Ferment at about 21C for about 1 week or when fermentatino shows signs of calming and stopping.
Prime with sugar and bottle or keg when fermentation is complete. For added attraction add one whole coriander seed to each bottle when bottling (microwave them if worried). |

Notes: Mash at 150° F (66° C) for one hour.
Boil 60 minutes, adding kettle hops as indicated.
Pitch yeast starter at 65° F (18°C) and ferment at 7 days.
Dry hop at 65° F (18° C) and lower the fermentation temperature slowly, about 2° F (1° C) each day, over the next 14 days until it reaches 34° F (1° C). Cold condition 10 days at 34° F (1° C), then carbonate and package. |

Notes: Bring 2 gallons of water to about 162°F and hold. Steep the grains for 15 minutes, then remove the bag and allow to drain into the wort. Add 3 gallons water and boil. Add the LME while stirring and stir until completely dissolved. Boil for 30 minutes, following the hops schedule.
After the boil, chill the wort to slightly below fermentation temperature, about 73°F.
Ferment at 74°F until the completion of primary fermentation. Combine dry hops and add half to the fermented wort. After two days, add the remaining dry hops, and allow 72 hours of additional contact time (five days, total).
Brewer’s Notes
This beer will be smooth in the mouth and features aggressive late and dry hopping, making it more of a “New School” (hence the name) American pale ale. Note, too, the shortened boil time: With no bittering hops to isomerize in the boil, we can get away with a shorter boil time designed to drive off SMM/DMS and dissolved oxygen. This beer features bright hops flavor, and despite the minimal “hot side” contact time on the hops, it makes up for it in sheer volume—28 IBUs are derived from the whirlpool (or flame-out, if you don’t whirlpool) hops, so be sure to allow 15 minutes of contact time before chilling.
Beer is cloudy assume from the Oat Malt. Maybe substitute and end with a clearer beer? Great balance, hoppy flavor but not bitter and not fruity like a hazy. More pine notes. OG and FG measured perfect to recipe. Have 7 gal boil kettle, steeping 5.5 gal worked fine and no issues with boil over. Really good summer beer, getting good reviews from friends. |

Notes: Adaptation of Brewer's Brown Ale: https://www.brewtoad.com/recipes/brewers-brown-ale
Increased volume, reduced SRM, increased IBU & adjusted ABV to better match the American Brown Ale style. Increase DME to 8.125lbs to match original recipe's target OG.
Yeast should be INIS-002 CENTRAL CALIFORNIA ALE YEAST
http://inlandislandyeast.com/yeast-library/inis-002-central-california-ale-yeast/
Not particularly sure about hop choices
Calculated efficiency based on NRB #6 brew day measurements. kept boil size (4 gal) in line with past brews (keeps method consistent). |
