Notes: Heat the liquid malt extract by placing the bag in hot water. Boil 3 litres of water, add to fermentor. Add warm extract and yeast nutrient. Stir, and add cold water until you have a total of 17 litres. Add 2 litres of chilled pasteurised passionfruit juice. Check temp, should be 20-23 degrees C. Add 1 packet of Champagne yeast. Ferment for 7 days, 21-22 C. Raise temp to 23-24 degrees. Add salt. Let ferment for another week. |

Notes: Pilsen and wheat malts provide a crisp and crackery backbone (and a rocky white head) to a dry beer where the yeast and hops are the stars of the show. The addition of cane sugar helps dry out the beer.
The Mandarina Bavaria hops, a new varietal from Germany feature intense tangerine, pineapple, lemon and citrus flavors with a resinous, herbal finish. Added exclusively in a post-boil hop stand and as dry hops, expect intense flavor and aroma with a lighter, refreshing bitterness.
Fruity and peppery, Wyeast's French Saison strain is highly attenuative, producing a dry beer, especially when coupled with the Brettanomyces blend. At the same time, it's high glycerol production leaves a fuller mouthfeel than is typically found in dry ales.
The Brettanomyces blend is primarily Brettanomyces Drei (guava, passion fruit, and apricot), with lesser amounts of Brettanomyces Bruxellensis (cherries, leather, barnyard funk) and Brettanomyces Claussenii (pineapple, citrus, mild funk).
The resulting beer should be dry, crisp, and pleasantly fruity. Expect prominent notes of citrus, tropical fruit, and pepper, supported by rustic funk and mild herbal notes. |

Notes: Steep specialty grains in 1 gal of “Heat 1 gallon (3.8 liters) of water in the brewpot until it reaches 160° F (71° C) ± 10° F (6° C).
Immerse the grain bag in the pot for 30 minutes. The grain bag may be dunked and swirled like a teabag during this time to make sure that all of the grain is wetted. Moving it around will help improve the yield, but don’t squeeze and wring it, because that encourages bitter tannin extraction. Maintaining the temperature during the steep is not important.
After 30 minutes, remove the grain bag from the pot, and let it drain. Do not wring out every drop of wort.
Now you can add the malt extract and any additional water to the boiling pot to bring it up to the boiling volume.”

Notes: 11/24/18: 5 tsp yeast nutrient (3 tsp at pitch, 1 tsp @ 3 days, 1 tsp @ 6 days)
In a large brew pot, simmer 3 gallons of water.
Remove pot from heat and add 10 lbs honey and 32 oz maple syrup and 3 tsp yeast nutrient. Stir until fully dissolved.
Rehydrate the yeast (1/4 cup @ 95 to 100 F for 20 min) in a sanitized cup, and cover.
Add the must to a 6 gal primary fermenter along with 2 gal cold water. Aerate it, and pitch the yeast.
Seal fermentor with airlock and store in a dark place at a temperature of about 70 degrees.
11/27: After 3 days, add 1 tsp yeast nutrient and aerate do this again after another 3 days (11/29).
(12/16) After another week, add the remaining 32 oz of maple syrup and aerate. weeks add 32 oz (2nd) maple syrup.
(1/20) 3 weeks siphon, re-rack the mead into a sanitized 5 gallon carboy. Add the Oak Spiral.
(2/17)After another 3 weeks, re-rack, then let age for 2 months.
(3/30) Dissolve the 3/4 cup in 2 cup warm water, add to carboy, and stir lightly.
Fill sanitized bottles and let age for 4 months or more until your big celebration!
Target SG: 1.12 (15.54 %ABV) Actual: 1.086 @ 5 gal.
12/16/18 Added 32 oz MI Maple Syrup and Transferred to secondary
