Notes: For Saflager 34/70 pitch the yeast directly in the fermentation vessel providing the temperature of the wort is above 20°C (68°F). Progressively sprinkle the dry yeast into the wort ensuring the yeast covers all the surface of wort available in order to avoid clumps. Leave for 30 minutes, then mix the wort using aeration or by wort addition ramp down slowly to 53 deg. At 2 - 5 points from the target FG turn the temp control off and hold at 66 deg for 48 hrs. Turn the temp control on and ramp from 66 down to 32 deg at 2deg/day and lager 60 days. Transfer, carb, and serve. |
