Notes: All the flower hops were 6 years old, vacuum packed kept in the freezer and the initial 90 minute add only stayed in to the 45 minute mark. I expect they are about 50% fresh. They were stirred as best as they could be in the confined hop spider but I suspect they did not add their full lupulin amount. I didn't want tannins and chlorophyl flavors. Future suggestion is to use bags and not the hop spider as much. Especially for flowers.
Dextrose and first dry hop addition will be at 24 hours after pitching yeast. Brown sugar addition was on second day in primary with one quart boiling water as was the dextrose.
Started out as a Pliny the Elder Clone and I went mad with using up old hops. Fingers Crossed the Flowers were not very strong.
Also, the secondary plastic fermenter had an aroma to it, but I am not willing to throw it away. Yet.
Tasting notes:
1 week in the bottle at 68 degrees F. Diacetyl nose and flavour. Juniper berries in the nose. A little hazy but nice copper colour. small amount of carbonation. Malt and bitter forward. Hop nose not so much. hop floral notes minimal. mostly just flat malty and bitter.
2nd week now kept at 60 degrees F. Diacetyl is gone in both nose and taste. Very clear copper colour and partially carbonated (good but not fully yet). No head. Noticeable sediment in bottom of bottle. Nose of malt dark fruits and juniper berries and spicy hops. nicely malt forward taste, dark fruits and junipers with lasting bitterness that starts well after sipping. This may age very well. I definitely intend to brew this again but with a different hop schedule. |

Notes: I copied my Citra IPA recipe and decided to use Mosaic hops for the first time.
Brewing notes:
There are very little hops used in the boil. Only .75 oz at 60 mins. 2 ounces went into the kettle at a 180º whirlpool, which I stirred for 15 minutes. I used a large amount of hops, -5oz-, to dry hop, along with the zest of two grapefruits. The dry hop and zest were added in sanitized bags, with a sanitized spoon to make them sink.
