Notes: Substituted dark crystal 80L for crystal 225 EBC
Ended up using 26L of water.
Heat up 20L of strike at 100C, transferred 5L to second bucket, then added 5L of cold water to strike, ended up at 70. Mashed for an hour, added 1L of water 30mn in and maintained 64C. Second sparge was at 55C.
OG finished at 1.072
FG at 1.024
Grain was not fine enough, will try this again soon.

Notes: Add fruit after souring is done and while yeast starts working.
Total water needed 6.66 Gal (27 qts)
7 quarts mash in at 144 hold for 60
Remove 3 quarts of thick mash and bring to boil and hold for 10 mins
Return to mash tun and stir in - will bring up to 151. Hold for 10 mins
Add 3.5 quarts boiling water to bring up to 170. hold for 10 mins
Sparge with remaining 16.5 qts @ 170
Sparge directly into fermentor - no boil! Wait until cool, then pitch yeast - no need for starter.
Bottle when finished fermenting and wait at least 8 weeks to open. |

3 pkgs of Ringwood in a 2.2L Starter with Stir Plate
Diacetyl Rest for 2/3 days after primary fermentation completes
Add 1# of Cacao Nibs in the secondary for 5 days.
Add 10# of Raspberries in the secondary for 5 days.
Add 1oz Vanilla after raspberries ferment out
Let rest for 2 weeks or until Diacetyl is reduced
