Add yeast nutrients at different steps. From Northern Brewer:
Anyone who has ever stirred a fermenting beverage knows the foaming, triggered by the release of CO2, can make one heck of a mess! To help minimize this, you should mix the nutrient blend into ½ cup of must and add it back to the fermenter. Then begin to slowly stir the must to release the main portion of the CO2 gas. After the foaming has subsided you can begin to stir more vigorously. Mix the must well enough to introduce plenty of oxygen into the fermenting must. Oxygen is needed by the yeast throughout the growth phase. Oxidation is not a huge concern until you get past 50 percent sugar depletion.

From Fifth Season Gardening: Fining with Gelatin: (per 5 gallons of beer)
Add ¼ to ½ cup of cold filtered water to a sanitized measuring cup
Add ½ teaspoon of gelatin on surface
Let sit for 10-15 minutes to partially dissolve
Heat water to 150-155 °F (I usually do small 5-10 bursts in the microwave. You may also heat the water by adding very small increments of boiled water) DO NOT BOIL THE WATER, you will make Jell-O instead.
Stir and test temp with sanitized thermometer
Pour into fermenter or keg. Use care in avoiding unnecessary cold side oxidation.
Allow 24-48 hours to work its magic prior to packaging or serving.

2-Row brewer’s malt- about 95-97% of the grist
Caramel 60 malt- the balance of your grist bill
Shoot for an OG of 15.8 plato (1.063 specific gravity)
Shoot for an FG of 2.5 plato (1.010 specific gravity)
This will put you in the ballpark of 7.0%ABV
Boil:
Use any hop with clean bittering at the start of your boil, shoot for around 50 BUs or so
Around 15 minutes from the end of the boil, add Columbus hops shooting for 5 BUs
To the Whirlpool, add Columbus hops at a rate of 1 oz per 5 gallons
Ferment:
Ferment around 68-72 degrees with a clean ale strain, something like 1056
After fermentation, if you can drop to 50ish degrees, and dry hop with Columbus at about 2 oz per 5 gallons.
Chill after a few days and allow to condition for 2 weeks. |

Kegged last week, tasted great already, the hops were present and pairing well with the blueberry but slightly subdued so I added another 3oz mosaic dry hop to the keg to even it out at 1lb total mosaic. Having a full pint tonight, its money.

opened today for gravity reading and to add dry hop. 1.018. smells great. tastes great. not as darkly colored as previous blueberry beer but its like a hazy pink on its way to purple. tastes great, a little harsh bitter note, could be the mosaic? there is no bittering hops in this brew.
should be good! should be ready soon! will leave it to dry hop for 3 days then take out the bag, take another gravity reading to make sure the fruit has fermented out / no further activity. after that will need to cold crash for a day or two then keg. possibly add another 2nd dry hop to the keg. i have a few oz left of the bag.

initial recipe formulation
copying base recipe from mango maya. keeping basically the entire grain bill, adjusting efficiency to 60, removing DME and adjusting base malt to get to 8%. im hoping to cook the oats and get better efficiency than in the past. if we end up with 6% it should still be tasty.
axing the 1lb honey malt - i dont think it plays as well with blueberry as it does with mango. also its heavy on lovibond making th ebase beer more orange colored which goes ok with mango but for blueberry im hoping more toward yellow hazy ipa base beer as a bright backdrop for the purple blueberries.
making up a new hop schedule, 100% mosaic. not sure how much to use. starting with 13oz - about the same as mango maya. will probably buy a bag so if it needs 3oz more in a 2nd dry hop, that will be available.
decided on only 3lb blueberry - last time i used blueberry i did 6lbs and it was way too much. i think it will not be lacking in blueberry color and flavor, especially accented by the mosaic.
could maybe do without the vanilla bean? and lactose? prob not. |
